Ghee oil became famous thanks to the ancient medicine of Ayurveda. This is refined ghee, for the production of which you need natural butter with a maximum fat content of 82.5%. This is the kind of ghee oil we will cook at home today. And if we are talking about butter, then I will also tell you the recipe for ber noiset sauce, which goes well with white fish. Taste good!

Ingredients for cooking GHII Oil:
2 packs of butter 82.5% TM "Cornflower field"
For the dish:
fillet of any white fish
lemon juice
salt to taste
Ingredients for ber noisette sauce:
200 g of butter 82.5% TM "Cornflower field"
1-2 tsp. capers
salt and pepper to taste
Step-by-step recipe for Mala Ghi and Ber noisette sauce
Dry the fish fillets, place in a baking dish lined with parchment. Drizzle with lemon juice and salt to taste. Place in a preheated 180 degree oven for 20 minutes.
For the ber noisette sauce, heat the pan over low heat and melt 200 g of butter. Heat it until it acquires a nutty color and aroma, it's 10-15 minutes. Finely chop 2 tsp. capers and add to butter. They will give the sauce an original pleasant taste. Add salt and pepper to taste. Remove the fish from the oven and pour the ber noiset sauce.
For ghee, prepare butter, a skillet, a jar and gauze.
Cut into arbitrary pieces 2 packs of butter TM "Cornflower Field" and melt in a saucepan over medium heat. Then you need to reduce the heat to a minimum so that it does not burn. Remove the top foam from the oil.
Ghee oil should be cooked over low heat for 20 minutes so that it flakes into 3 layers. To understand that ghee oil is ready, look in a skillet - you will see flakes.
Then strain the ghee oil through 4 layers of gauze into a glass jar. I put rosemary there for flavor. Cool for 15-20 minutes and refrigerate. And after it freezes, it can be kept at room temperature for a month.
