avocado oil
1 shallot, chopped
1/2 red bell pepper, chopped
1/2 green bell pepper, chopped
2 tsp minced garlic
2 tsp cumin powder
2-3 Tbsp red curry paste
1 can coconut cream
1/2 cup vegetable broth
1/4 cup frozen roasted corn
2 Tbsp agave (optional)
