Lion's Mane Mushroom Pepperoni
Yo, fam just made a homemade lion's mane mushroom pepperoni from scratch, and it turned out to be one of the best vegan meat I've ever made! Welcome to my second installment of "This Recipe Reminds Me Of," where I take a trip down memory lane and how it inspired this recipe. I used to have a thing for pepperoni pizza when I was young. I would pick all the pepperonis off and then eat the pizza. Lol,
People always ask me, "What is Lion's Mane Mushroom good for?" I say cooking. There are benefits, but I focus on how to grow a lion's mane, where to find a lion's mane, and how to cook a lion's mane.
This recipe will for sure end up being one of your favorites. Recipe below.
Ingredients:
3 Tbsp cup nutritional yeast
2 tsp smoked paprika
2 tsp granulated garlic
2 tsp minced onion
1 tsp dried oregano
1 tsp dried basil
1/2 tsp crushed red pepper
1/4 tsp fennel
1/2 tsp salt
1 cup vital wheat gluten
1/2 tsp ground black pepper
1 cup finely diced Lion's Mane mushrooms
1/4 cup tomato paste
1/4 cup water
2 Tbsp coconut amino
1 Tbsp avocado oil
2 -3 drops of liquid smoke
Instructions:
Combine the vital wheat gluten, nutritional yeast, paprika, crushed red pepper, garlic powder, onion powder, oregano, basil, salt, and pepper in a large bowl. Mix all dry ingredients.
Mix liquid smoke, coconut aminos, and water. Add the chopped pieces of Lion's Mane Mushroom, tomato paste, and water blend to the bowl. Mix until a dough forms.
Preheat a steamer. Divide the dough into two pieces. Roll the dough on parchment paper and twist the end tight as possible. Add to the steamer.
Steam the pepperoni for 30 minutes or until firm to the touch.
Allow the pepperoni to cool for a few minutes, then slice it into thin rounds.
Serve the pepperoni on pizza or crackers or whatever makes you happy.
