Exactly, usually they make incision around the neck. And start from the shoulder. But this guy started with leg and got screwed towards the end. He didn't quite run the knife towards bone But instead he pulled the upper layer off and made a mess

River fish like ravas are most difficult fish to fillet because of too many small pinbones which are even difficult to pick with twizzers whereas salmon is a large and easy level fish to fillet with very less pinbones that too just near the main spine of fish.I think with this fresh water fish even best chefs would struggle.

Short and simple, the demonstration of deboning specifically three types of common fish available freely in India by Chopra was good enough for me to make a change from buying singhara fillets at some cost to buying whole singhara at almost one third of the cost of the fillets and also have the satisfaction of using fresh fish . Then the discarded head, skin, bones and some meat attached to them was available for making lovely protein and .calcium rich soup.

If you keep the fish in freezer for one or two hours(Unless you are no hurry to cook) so you can cut it easy with out damaging the fish.
