How to Dehydrate Frozen Peas

Dehydrating is an excellent way to preserve your harvest, make healthy snacks, and have fruit and vegetables available in the winter.
I love to have dehydrated peas on hand to put into my soups, stews, and casseroles.
Dehydrating frozen peas is so easy to do, because you can skip the blanching process as the manufacturer has already done that for us! I personally do not bother defrosting or thawing out my peas. I buy it at the grocery store, and come straight home and put it onto my dehydrator trays using the mesh sheets. Put cover on. Set temperature to 130 degrees Farenheit. Dehydrate for 8-10 hours. Check the peas to make sure they are completely dry. You’re better off drying for longer than the minimum hours, rather than not having the peas done completely. If they’re not dried completely, when you store your item, you’ll have spoilage.
Once they've dried, let them sit for 30 min before you put them into your storage container. They are still warm from being in the dehydrator, and thus you’ll get moisture in your container, and again, you’ll have spoilage. Once they're cooled, you can start gathering them for your container.
For short term storage, I use plastic bags. For long term storage, I use glass jars with food grade oxygen absorbers.
Don’t forget to date your containers so that you can rotate your food!

Dehydrating also solves another potential problem. Dehydrated foods are shelf stable. They are not usually affected by power failures, unplugged freezers or mechanical failures of same. (I lost a bunch of food when someone in this household left the freezer door partly open.) FWIW... I try to keep my freezer inventory fairly low by canning and dehydrating (as applicabe) frozen foods. For example, I canned a number of frozen turkey's when they were on sale for $.29/lb in Nov 2021. Another plus, is that generally foods that can be dehydrated have a longer shelf life than being kept in the freezer. Rough guideline is about a year or less in the freezer, depending on the item. Dehydrated and canned foods average around 2-5 years of pantry shelf life. I've had foods to last longer than that. PS: A good way to use empty freezer space is to make block ice. Good to help with efficiency of the freezer. Maintains the cold longer in a grid down. Provides cold drinking water, for a time after thawing. I freeze water in clean 2-liter soda bottles. I use these bottles to chill water when blanching vegetables. Rinse them off and return to the freezer, when done. When I temporarily need that freezer space, put the frozen bottles into a cooler. Return to the freezer space is freed up again.

Have you ever had any problems with re-hydrating your peas. i actually cooked mine for a long time and they never got soft. Should I cook them before dehydrating? What happened?

It all depends on how well you dried it and how you stored it. Plastic bag, plastic container, glass jar, oxygen absorbers. Where you keep your container, is it dry and cold, or does it get hot, etc. The better you store it, the longer it'll last.

Properly stored they will last several years. How long depends on your individual circumstances and the item being stored. If stored in air/moisture tight container, heat and light are variables that can still affect shelf life. Best stored in a dry, cool and dark pantry.
