I used to cook my apples like that, but I’ve found putting them in big roasting pans -covered with foil- in the oven on about 350°-375° for about 45 mins works amazing. No extra water needed, no scorching, no struggling to reach the bottom of the big pot to stir. I’ll never go back. Thank you so much for showing the strainer with applesauce. I found one for sale near me and wanted to make sure it would work well for what I wanted. I’m so happy to step up from the smaller food mill. I do several hundred pounds of apples a year and having to scrape the food mill to get all the peel and core bits every time I run a batch through is so time consuming. So thank you!

@lisa get a steam juicer! It cooks down in about 30 mintues then you get juice to make jelly first then the applesauce! I LOVE IT ! I baught it from roots and branches from Amazon . It will save you alot of work !

wow thanks learn a lot... as just few days ago i help my folks as i was 30 years in California now back up north by great lakes i haven't done scene a kid now i"m the only one in family doing it with them and my own ... did about 30 quarts first round. now I'm hunting web to get more my own tools and i like your way. we did same cut and cook apples then used the cone type with wood go around and around then in jars and hot wet bath to sertin presser I'm learning and thanks again you guys I'll be remembering / learning canning again

I pretty much followed your recipe this year for my apple sauce. However, I used the 'knife' that cores the apples and slices it into eight slices with one push instead of cutting into eighths. It was easy enough to core/cut and saved having to process the core and seeds through my Squeezo. I also hot bathed 6 jars and pressure canned 6 jars. Not two years worth, but it will keep this old widower fed with one jar per month for the next year.

I’m new to canning. For “regular” canning lids, they say to remove the rings after the canning process. Is that different when using the reusable lids?

Yes, it is different with reusable jars. You keep the rings on to help keep the lids secure.

I am wondering the same thing. I have three screens. I use the middle one but it seems like a lot of the apple is getting wasted.

I believe that the one I have came with the victorio when I got it... I'm not exactly sure what it's called, but I think it's the 'middle one'. Sorry I can't be more specific.

Can we use this same recipe for commercial purposes? I mean the sauce cannot change it's color or taste for 2 years?

I would think so. You'd have to just check what your local requirements are.

How long would it take to make enough applesauce to live off of entirely.

Well, that would depend on how many individuals in your family and how often you eat applesauce. If you roughly track that over the course of a week or 2 weeks, then add it up, you'll have a rough idea of how much applesauce your family eats in a year. Then you can can up enough to last you from one season to the next.

So I just bought one of these and it grinds red plastic into my food. Does anyone else have this problem?! I’m 99% sure I have it set up right but the plastic auger grinds on the strainer?

Oh no! So sorry to hear that. It shouldn't be grinding on the strainer. Do you have a Victorio Strainer?
