oh my god. ive been doing things right for some reason! ive been working as a barista for about 2 years and no one taught me how to steam properly. no one knew how to deal with these stuff. thats why i had to teach myself how to make coffee and serve cappuccino, which in my case was the hardest part. it was just my gut to introduce air into my beaker when steaming so that i create foam easier and then i lowered the level alittle down after foam almost hit its summit.

This is an overall very good tutorial. I suppose the only constructive criticism i have is that this person poured the steamed milk from the spout. For a cappuccino you will want to pour from the side of the pitcher. The point of a cappuccino is the amount of foam. Otherwise it is just a latte.
@boaz3077
@boaz3077 5 лет назад
The difference between a latte and a cappuccino is the amount of milk. Not from where you pour that milk in.
@wasitphon
@wasitphon 5 лет назад
@@boaz3077 I believe what he meant is that pouring from the spout will bring out more milk than foam. Comparing to pouring from the side of the pitcher that tend to be a faster pour thus causing more foam.

@ventreale
@ventreale 4 года назад
Aloha 449 the reason it’s not different (from my limited knowledge lol) is because a latte and a cappuccino are only different in the espresso/milk/foam ratio, lattes are more milk and less foam! Cappuccinos are equal parts all, I think. I’m not a barista though, I just like coffee, so I could be wrong 😂 also lattes often have flavors in them and that’s not as common with cappuccinos

A note on him tapping the sides of the portafilter with the tamper. I did that until I realized that it put dents in both the portafilter and the tamper. Plus, I was told by my boss’ boss, a certified level 2 Barista and a cue grader, that it promoted fines migration which can change the taste of a shot from what you would expect. TL;DR don’t tap you portafilter with the tamper

My issue with this is the fact that it’s a latte not a cappuccino. A cappuccino is equal parts espresso, milk and foam. So 1/3 of each. He just made a latte, when you swirl the milk jug it’s also best to bang it on a counter to remove any unwanted larger bubbles in your foam. When you swirl it, it should make a thick dome shape of foam. That’s cappuccino foam. After putting milk and foam in your espresso filled cup. Put chocolate powder on top. Cappuccino.
@ivirjam3374
@ivirjam3374 5 лет назад
The Return no, I’m serving quality, consistent and enjoyable product to customers. Cappuccinos are known to have chocolate powder sprinkled on the foam.
@ivirjam3374
@ivirjam3374 5 лет назад
The Return I do agree however, traditionally a cappuccino has a dash of cocoa on top. I suppose if you want pure espresso taste with a milk based coffee go for a latte or a flat white.

Looks like a rocket maybe? I have an ecm that is similar. $2500. My Ecm bean grinder: $900. My dedicated plumbed water filter: $500. $500 bean roaster. Green beans from bean corral. 4 cups of $5 lattes per day and it’s paid for in under 2 years. …does take about 20 min for the water to heat up so that’s the huge difference at home for a few cups vs a coffee shop that once it’s heated it make money all day. Only real downside I see in my set up.
