I've been making cheese powder since I saw your last video. I just finished 6 different flavors last week. After I run it through the blender, I put it back in the dehydrator on fresh paper towels for about another hour. Then I blend it again and it turns to a fine powder. I've also found that the amount I put in the blender makes a difference. Put enough that it's turning in on itself like a whirlpool. Too much and it just bogs down and too little it just stays chunky. I love combine them in cheese sauces for veggies, I use a fondue recipe and it's perfect cheese sauce everytime. I've done cheddar, swiss, mozzarella, Monterey Jack, parmesan, asiago. Thank you Heidi, this has been the funnest dehydrating projects I've done!!

Idea for a makeshift vacuum chamber…using small food jars that will fit inside a wide mouth pint or quart canning jar, top with Food Saver-style vacuum lid, and pump out air with the brake bleeder. I save small amounts of dried herbs this way in jars that used to hold olives, etc.

Thank you for making this video!! I've been wanting to start dehydrating cheese (and tomatoes too!) I'm glad you mentioned the mold. That's actually how bleu cheese is made, by letting it mold! And people LOVE it! Back in the pioneer days, they would cover their cheese with oiled cloths and when they'd check it once a week they would shave off any mold, re-wrap it with another oiled (or buttered) cloth, and set it back on the shelf. They would do this until it aged how they wanted. The first Little House book details this extremely well, and it even talks about how young Laura and Mary would eat the molded pieces Ma would cut off. Clearly it didn't hurt them lol.

I love the way you explain why, when, where, how in your video classes! I’m one that hates shredding cheese and also prefer chopping. One thing I’ve noticed is after thawing my frozen vacuumed sealed cheeses, they crumble so easily! I have only read about one third of the comments, so I’m excited about them also! Thanks.

I can attest to the need for a low temp. I tried dehydrating a previously frozen 8 Oz. brick of cheese. It melted into the cloth covers I used. A small amount was able to be saved and used for melting into a sauce. I did always imagine I was ingesting tiny bits of cotton. Lol

Heidi, can we use Goat Cheese to do this as well? Heidi, that is how we were raised too just cut the mold off. 😁 Heidi, did you say in another video on meat to dehydrate with the turkey, you freeze it first and then dehydrate it? Heidi, you always have great videos on food preservation and teaching us how to do so. Thank you, Heidi, I do like the idea with the cotton sheets to take some of the oils out of the cheese. OH, by the way Thank you, I did get the silicone sheets the brown ones! I did get that little Jar Sealer and Accessory Hose Compatible with FoodSaver Vacuum Sealer, DAIKA Sealer Kit for Wide-Mouth & Regular-Mouth Mason-type jars (with a Manual Vacuum Pump) and I love them both. We also purchase the Cosori for a friend too! she has not use it yet but were going over to help her.

You do not have to wax the cheese to make the cheese powder, I just recommend it if you cannot get sharp cheddar

You can use powdered cheese on popcorn if you mix it with melted coconut oil. Doesn't work with butter.

I'm going to try this. I'm kicking myself at one time I was given all kinds of shredded cheese and I kept them in my freezer and I had so much actually gave it away. I was running out of storage space. And now I'm thinking how I could have dehydrated it and kept it. Ugh

So if I buy le craft sharp cheddar I should set it ot for x amount of time to dry before choping and dehydrating or just grate immediately and dehydrate. Ive never thought about dehydrating cheese. If you are not going to wax it, you can just grate or chop and dehydrate right away.

It can be done as some people use nutritional yeast to flavor cheese breads. Not sure how though, since I mostly eat rice.

The wax can be stored wherever. I keep mine with the cheese waxing supplies back in my pantry and this includes the used wax that I was up. That I simply put back into the pan I use to melt the wax since it is dedicated only to that so I do not have to try to wash it every time

I've been eating some cheddar and parmesan cheeses that I'd waxed and stored in the veg bin of the fridge 1 1/2 years ago. Neither seemed to have aged much at all. The Cheddar was a mild kind when I waxed it. I've since waxed Colby and Pepper Jack cheeses but not tried them yet. Could it have been the refrigeration that kept the cheeses from aging? If so, I will wax some sharper cheeses. I plan to try making the cheese powder next.

Yes, I would think it was the refrigeration. The point of waxing cheese is to be able to store it in a pantry

I'm sure this varies by type of cheese, but taking sharp cheddar as an example, how does the weight compare before drying vs after dried? I'm trying to determine how much cheese to buy in order to get the amount of powder I want. Also, when you wax your cheese & set it on that cloth (towel?) how do you go about 1-laundering the cloth, and 2-washing the pan to make sure all the wax comes out. Thanks!

The problem with vacuum sealing such things is it will also pull the air out of the breads making them crumple so it would be best to do so carefully and watch it as it is sealing up

You can shred it if you want and dry it that way and leave it, since I am not shredding it before dehydrating in the first place, I am unable to leave it shredded

Heidi, I know you said you could shred the cheese and it would dehydrate faster but what about purchasing it already shredded? I think at Costco the brick of cheese is about the same price as the shredded cheese. So the work is already done for you would that work or would it still be better to get the brick and shred it myself? That’s what I would normally do anyway if I were to use it fresh.

… I recently bought a couple of large sharp cheddar blocks from Costco I’m going to dehydrate … I think it would make a good queso dip … QUESTION : the eggs that I powdered are dry, but have a slight off smell … is this normal ? … mine look more orange compared to your yellow eggs …

Most of my eggs look more orange than yellow, despite how they may appear in the photos, but that is normal if your eggs are from your own chickens or have been purchased locally from those with chickens. I do not know what you mean by "off" smell so I cannot say. Mine have a slight smell as they should but it is not strong nor what I would think of as "off"

Yes, you can just jar it up without powdering. Powdering just makes it easier to use and takes up less space in storage

The cloth. What type of cloth. I am tempted to go purchase a cloth specifically for this. I don’t want to use wax paper. Cheese cloth or kitchen towel or 100% cotton from fabric store. Sorry for such a lengthy question.

As long as it is cotton. I use recycled cotton sheets because they are thin and allow plenty of air flow

Heidi: The process of waxing introduced heat into the cheese blocks which is why you experienced weeping. Maybe try using a lower the temperature on your wax next time to reduce weeping. You are correct the mold on cheese is for the most part non-pathogenic. I agree it tastes gross.

Waxing cheese requires a certain heat of 200°, it is not recommended to go lower than that. If it was the heat that caused the moisture, I would have had that in ALL cheese blocks I waxed rather than just a few

I have had some that I am working through left unsealed for a year with no problem. As long as it stays dry, it will not mold but it is possible it may get stronger in flavor over time as cheese is a cultured substance

Sorry, I do not measure, I just add water or powder until I get the thickness I desire. That is really all you need to do. Let's say you start with a half cup of each, heat it up and it is too thick, you add more water, too thin, add more cheese

Question i have 2 , 5 gallon buckets of glassed eggs. Could i safely dehydrate some of these eggs. The consistency of glassed eggs is a little less firm than fresh. But i had them glassed since march. We scamble and recipe use, and they are great. But i like the idea if dehydrated eggs.

I would assume so but I have never water glassed eggs so I cannot say how they would turn out. I know they are slightly more runny after stetting for a time but I highly doubt that would affect their ability to dehydrate well

Yes, now that I finally have a good vintage hand crank cheese grater, that is what I do but when I made this video I had not acquired it yet and hate grating by hand
