How to make a warm courgette and bacon salad 

This is a delicious summer salad, really tasty and easy to make!
Serves 2
INGREDIENTS
Olive oil
4 rashers unsmoked streaky bacon (rind removed), chopped
1 Courgette, diced
Crispy lettuce, any sort, shredded
Croutons
Salt and Pepper to season
METHOD
Preheat the oven to 300 degrees.
Chop the bacon.
Place a dot of olive oil in the frying pan and fry the bacon until beautifully golden and crispy.
Remove bacon from the pan and place into a bowl.
Dice the courgette and add to the same pan the bacon was fried in. Fry the courgette in the bacon fat. Season with salt and pepper.
The courgette will take on all the lovely bacon flavours as well.
Shred the lettuce and place onto the serving dish.
Add the crispy bacon and the warm courgette.
Sprinkle over some croutons.
