I found this recipe for a very quick and easy shoyu ramen (actually it was a chuka soba recipe but same thing) on a youtube channel called 独学ラーメン店長チャンネル . I tried it but the original recipe came out a little too salty for me. I asked for some advice in the comments and surprisingly he quickly helped me fix the measurements so that they would work with things we can find in America. The fix created a pretty solid bowl of ramen that you can make in about 10 minutes (not including toppings). I think all the ingredients should be pretty easy to find anywhere so please give it a try.

Shoyu Ramen
Ingredients (1 serving):
Tare:
2 Tbsp soy sauce
1/2 tsp Kosher salt
1/4 tsp MSG
pinch of sugar
drop of mirin
Aroma Oil
chopped ginger
chopped green onion
cooking oil
Soup
450 ml Water
1 tsp fish stock powder
1 tsp chicken stock powder

All you need is a International or Asian Market for the hondashi, just ask for hondashi not fish stock powder. Also msg is at walmart

They’re pantry ingredients for those who already do Japanese cooking, so once you obtain them, you’re good to go for ALL KINDS of a Japanese dishes, since they use the same handful of seasonings for everything. When you’re shopping around, add dried kelp to your list, so you can make dashi with it...or if you don’t mind and simply prefer the convenience, just buy kombu dashi (the kelp version of Hondashi).

Soy sauce: a dark substance made of soy bean, most Asian can live with this alone. Kosher salt: salt, but kosher. Good for driving away your Jew neighbor. MSG: a flavor inducing material that yells delicious. Apparently makes people stupid. Mirin: alcohol for cooking

店長 (tenchou) actually means shop manager and can be translated loosely to Ramen Chef. I don’t know why I said owner I’m the video. Also, this is actually a recipe for Chuka soba. I figured not many people would know the difference so I just titled it shoyu ramen.

This is probably the easiest bestest ramen recipe I’ve ever tried. I actually had all the ingredients needed cause I live in an Asian household which helps out a ton- Anyway it turned out literally amazing and the flavor is soooo good, tysm!!

If you prep everything in advance then yes its quite quick its just a lot of little things that need to be cooked, but if you have an egg cooker and some simple noodles i.e. egg noodles its real quick, meat takes the longest tbh.

Just to make sure everyone knows DO NOT USE TABLE SALT DURING THE COOKING PROCESS. It contains decaking agents that will make your food more bitter and alter the texture. It is important that you use kosher salt since koshering salt is just plain salt. Only use table salt at the very end

@@WayofRamen no, it's the decaking agents. Iodine's in there as mostly a supplement since we need only a very small amount to function properly putting a tiny bit in salt is very convenient Edit: nevermind the iodine can impart a bitter flavour as well so it's a combo of all of them together

Dude. Bless you sir. Such an easy recipe. First time making ramen and I’m amazed at how well this turned out. My bro who’s a noodle lover really liked it as well. I got all the stuff I needed at HMart. Didn’t realize that I was out of ginger in the house till the last minute, so I subbed ginger powder and put it in the shoyu mixture. I also just used a regular carton of liquid chicken stock (instead of powder). Put in half stock and half water then put in the fish powder. Still turned out great. Blown away that I could make a soup with these flavors at home. Thanks again sir!

So I already had most of the ingredients at home except for fish powder stock, and fresh green onions, and ginger. I substituted with fish sauce, powdered ginger, and sweet onion. It all turned out very delicious! I added a drop more mirin, and pinch of sugar for my taste. Delicious! Thank you so much for sharing!

Most Asian food recipes call for it that I've seen. Because of the fearmongering around it, though, it's almost impossible to find it in stores. Generally clerks tell you that the closest you're going to find is seasoned salt.

Err, no it's not? That's the point though; if it was fancy or normal ramen, it wouldn't be a 10 minute convenient dish. It's just cheap, fast ramen with good recipe building to make up for not going through the steps of making stock and letting things sit for 6-12 hours. It's good at what it does BECAUSE it's not fancy lol. Calling it fancy is like calling a single frame of animation a fancy illustration. It's not. It's made quickly on purpose to fit the role of animation; it's not meant to be fancy. That's the point. But I get what you mean either way lol.

I substituted Better Than Bouillon roasted chicken base for the powdered dashi and chicken stock and yellow onion for green onion in the aroma oil. Turned out amazing. Thank you for sharing this simple yet really satisfying recipe! I’m afraid you’ve set me down a dangerous path making ramen from scratch...

Made this yesterday for my japanese boyfriend and he said it was really delicious! :) Thank you very much for your recipe! Also tried using Spaghetti instead of Ramen noodles, like you did in the other video and it worked really well! The noodles kinda tasted like Chanpon noodles, probably because of the thickness

I made this recipe last night and it was absolutely delicious. I made extra tare and lots of aroma oil, so I made some today as well. The second time around, I adjusted to halve the amount of HonDashi for the stock; one tablespoon of tare, and two teaspoons of aroma oil. Delicious.

They have Mirin and Nori at SM Supermarket and Robinsons Supermarket, the hon dashi can be substituted by Knorr Fish Cubes. :)

Made this except I left out the MSG and subbed out dashi powder for an equivalent amount in fish sauce. I skipped the aromatic oil and yet it was still delicious! Thank you so much for this recipe. Can't begin to imagine how much better it'd be with all the right ingredients!

Just made this for lunch and it was both delicious and a HUGE game changer! It took me about an hour just because I was slowly following each step and prepping my toppings lol, but I think if I prep a big batch of tare and oil for the week it’ll really cut down on time! This recipe is awesome! I made my broth with 2 cups of water, 1 heaping tsp of white miso paste and 1.5 tsp of mushroom seasoning since I didn't have the chicken stock powder and fish stock powder. It is SOOOO much better than the seasoning packets! Thanks for sharing!

Oil you cook with 😂 So Vegetable oil, Sunflower oil, Peanut oil, olive oil.... Basically any oil in your pantry you can use to fry with. You can use fats as well like he did where he use lard instead of oil.

Just made this for the first time today after getting ingredients for both this and your miso ramen. Made the noodles yesterday and it was amazing! Added a couple of extra things to my toppings and will work on adding more the the noodles making. Will be making the miso ramen tomorrow and thanks for the videos!

Kyra096 You can try Asian Market if there is any near your area? They should have chicken stock powder or mushroom powder taste similar, too (they all come in quite an amount but you can always use them for any kind of seasoning: soup, omelets, meat, ...). I personally feel like chicken stock and fish sauce can replace the 2 types of stock powder, but of course, with its own ratio.

I made chicken stock a while ago and wanted to make ramen with it, so I used my stock and oyster sauce instead of the powders, and made this tare and aromatic oil. Thank you for making it simple!

Just did some very superficial research (picked up a bag of Sapporo Ichiban Instant Noodles and looked at the label), it's 870mg. So, 0.0009 Kilograms per serving! Or 870 millionths of a kilogram per serving. I had a Japanese roomate when I was in college, he had a personal MSG shaker, and used to even put some IN instant noodles! At the time those Ramen packs were not really heard of, and we had MSG (AC'CENT) in America, but people used it in cooking and didn't just throw it around, it was still a novel expensive product. Now you can just buy it in SACKS, I worked in a restaurant that had a DRUM of it! But I digress. I"m so used to arguing about MSG it's kind of automatic!

I used your tare recipe and base broth recipe to create my own version with pork fat & kimchi! The noodles turned out surprisingly well although I heard a tip once to put cold water in the boiling water about 4 times during boiling(I used an ice cube) and it makes the noodles springier. It was absolutely delicious thank you for sharing!

Just made it for my supper with some changes, substituted sugar with honey, green onion with garlic instead, I don't have fish stock or chicken stock powder, so I added some soba sauce which already heavy on Katsuobushi taste, turns out perfect, I think 450ml water was too much for me, will try lesser water for more packed flavour next time. It's so easy to make and fills my supper taste needs perfectly.

I can't believe i actually did the recipe, followed the instructions and got a legendary ramen bowl, for a dish prepared in 10 minutes and made out of powder seasonings, it's a 10/10, i bought the hondashi,msg and chicken stock(lee kum kee) from amazon, the mirin i got it from heb everything else is easy to find

I´m no chef but i am a ramen lover and a home cook. I bought a good ramen recipe book and tried some internet recipes too, so I can say that this is legit. You will get the easiest, but also the the worst, bowl of what you can call ramen. But it´s still good, I recomend you to try.

Thanks for the video and the time and effort you put into it. This simplification of the original recipe makes for a good easy and quick alternative. Except from mirin, which you have to buy in an asian store, the other ingredients can easily be found in any big supermarket.
