Bún bò Huế Recipe | Spicy Vietnamese Beef & Pork Vermicelli Noodle Soup 🍜🔥
Recipe:
2 Lbs of Pork Hock
1 Lbs of Pork Trotter
1 Lbs of Beef Tendon
2 1/2 Lbs of Beef Bones
2 1/2 Lbs of Beef Shank
Pork Ham | Chả lụa
Shrimp Paste | Mắm tôm
Pork Paste | Giò Sống
Pork Blood Cakes | Huyết
Vermicelli Rice Noodles (XL)
Fish Sauce (1/2 Cup)
Rock Sugar
Lemon Grass (4-6 Stalk)
Salt 🧂
9 QT of Water
Ice 🧊 Water
Sa Tế Chili Oil Sauce 🔥🌶
3/4 Cup of Vegetable Oil
1/2 Cup of Minced Lemon Grass
1/4 Cup of Minced Garlic
1/4 Cup of Minced Shallots
2 Tbs of Annatto Seeds
Desired Amount of Chili Peppers
Shrimp Paste | Mắm tôm
- In a Jar or Mixing Bowl add 1/4 Cup of Shrimp Paste to 3/4 Cup of Water.
- Stir & Combine in well. Cover and Refrigerate for 1-2 Hours or overnight if you can.
Crab 🦀 & Pork Meatballs 🍡
14 Oz of Pork Paste
3/4 Cup of Crab Meat
1 Tbsp of Chicken Bouillon
1 Tbsp of Sa Tế
Broth 🍜
1/2 Cup of Fish Sauce
3 Tbs of Chicken Bouillon
1 Big Piece of Rock Sugar
* Simmer Broth on Medium Low Heat for 3-4 Hours.
* Add 1 1/2 Liter of Water back to pot, as Soup will Reduce and Evaporate.
Veggies & Herbs
Mint
Limes
Vietnamese Coriander | rau răm
Banana Blossom or Flower
Chopped Scallions
Chopped Cilantros
Chopped Chilies
Cabbage (Thinly Sliced)
Onions 🧅 (Thinly Sliced)
- Adjust to taste with Fish Sauce, and Chicken Bouillon.
On another note 📝
* I have made this with Pineapple 🍍 before in the past and sometimes with Ginger. Also very Delicious 😋.
Instructions:
1. In a Pot of Water. Add Salt and Vinegar.
2. Parboil Pork Bones for 10-15 Mins.
3. Strain over Cold Water. Clean, and Rinse Well.
4. Parboil Beef Bones, and Beef Shank (repeat steps 1-3).
5. Add Shrimp Paste to a Mixing Bowl.
6. Dilute Shrimp Paste in Water.
7. Refrigerate 1-2 Hours. Or Overnight.
8. Bruise Lemongrass Stalk.
9. Remove outer layer and bottom hard ends of Stalk.
10. Discard Top 30% of Stalk.
11. Tie with Cooking Strings.
12. Bring a Clean Pot of Water to a Boil. Add Sea Salt.
13. Introduce Meat, Bones, Lemongrass, Char Onions into Pot.
14. Remove All Meat. And Onions. Leave Bones in Broth.
15. Give an Ice Bath.
16. Ladle in Shrimp Paste Liquid (Top Clear Portion Only).
17. In a Pan. On Medium High Heat.
18. Add Annatto Seeds, and Vegetable Oil. Give it a Stir for 1 Min.
19. Strain for its Extract.
20. On High Heat. Add Vegetable Oil to Pan.
21. Add Minced Garlic, Shallots, Lemongrass, Chill Powder, and Annatto Oil.
22. Stir and Combine Well. Cook for 1 Min.
23. Meatball Mixture. In a Mixing Bowl.
24. Add Pork Paste, Crab Meat, Sate, and Chicken Bouillon.
25. Mix and Combine Well.
26. Use a Spoon and Scoop Desired Amount and Place in Broth.
27. Meat Ball will be Cooked when it Floats up.
28. Season Broth with Fish Sauce, Chicken Bouillon, and Rock Sugar.
29. Simmer Broth on Medium Low Heat for 3-4 Hours.
30. Cook Vermicelli Rice Noodles Size XL (Follow Package Instructions).
31. Strain over Cold Water and let it Rest.
32. Thinly Slice Meat and Tendons. Place it in a Plate.
33. To Assemble. Place Desired Amount of Noodles into a Soup Bowl.
34. Place in Desired Amount of Meat, and Tendons.
35. Ladle in Desired Amount of Broth.
36. Add in Desired Amount of Chopped Veggies and Herbs.
