When this frosting sets up, does it set up a little hard? It's more like a very, slight crunch or very slight crust. My mother used to make this type of frosting on my Birthday Cake, and it would always have a very slight crunch or small crust to it. Does your frosting set up like that? My mother would make it the day before, store it in the fridge, and then take it out one half an hour before serving. I'm just wondering, does your version of this recipe set up a bit crisp, or slightly crunchy, or with a crust to it? I am just shooting for getting that little crust. What are your thoughts? There is no butter in this to make it a buttercream. Also French buttercream uses the yolk, this technique is more similar to Italian buttercream had there been butter added after whipping the egg whites and sugar
