How To Make Char Siu Pork | Foodie Nation

This week's star item, Char Siu Pork, is screaming Chef Jason's name, and yours too:
Yield: 10 - 12 Portions
INGREDIENTS
3 Lbs Whole Boneless Pork Shoulder
½ Tsp Black Pepper
½ Tsp Five Spice Powder
4 Garlic Cloves, grated
1 Tbsp Freshly Minced Ginger
¼ Cup Chinese Hoisin Sauce
¼ Cup Brown Sugar
¼ Cup Chinese Shaoxing Wine
¼ Cup Honey
3 Tbsp Soy Sauce
2 Tbsp Oyster Sauce
1 Star Anise
1½ Tbsp Red Food Coloring (Optional)
METHOD
1. On a clean cutting board, place pork shoulder down and cut into three length-way strips.
2. In a large zip lock bag, place in all the other ingredients and mix thoroughly to combine.
3. Add in the three pieces of pork, seal the bag well, shake and massage the marinade onto the pork very well to coat. Place bag into the chiller and let marinate overnight.
4. Preheat oven to 350 degrees Fahrenheit.
5. Line a baking tray with foil and place a roasting rack into the tray. Place pieces of pork on top the rack with even spacing. Pour a little water into the foiled tray to prevent the marinade from dripping and sticking to the foil and hence burning whilst baking.
6. Bake for 20 minutes. Meanwhile pour the remaining Char Sui marinade from the zip lock bag into a small pot and boil for five minutes to thicken up sauce.
7. After 20 minutes, remove pork from oven and baste with some of the thickened Char Sui sauce.
8. Place pork back into the oven and bake for another 20 minutes or until pork is cooked through and registers to 145 degrees internal temperature when probed with a cooking thermometer. Immediately add another basting of Char Sui Sauce over hot pork and let rest for 15 minutes to allow juices to settle.
9. After pork has rested, slice thinly with a sharp knife and serve with Chinese Egg Fried Rice or get creative and make a sandwich with fresh homemade bread.

Instead of red food coloring use beetroot powder or like I do beetroot juice. The beet flavor blends well with all these spices and seasonings and again the flavor. So rich

I absolutely love Char Sui. I've had it a few times and it's so good. They even give you the reduced sauce at particular restaurants to-go.

I had char sui kai fan in the eighties once and it's 2020 and I still remember it the best food I ever had I had it in Trinidad

I like the video but would have loved to see the chef slicing the pork, there is something oddly satisfying about that, especially when you see the juices running from the meat. Also about the fried rice, its the first time I'm seeing this product and it looks like a " boiled fry rice" chef I saw you boil the rice for seven minutes and then the food on the plate, was there any frying process for the rice?

You should take out some out some of the charsui mixture before putting in the pork to marinate. This would be the last basting when the meat is finished cooking

Actually typically loin is not used.... the typical cut is pork neck.

Between the soy sauce and the other Chinese sauces, therein lies the salt to season the pork. Remember it should marinate overnight

Just tried this recipe. Gotta say, adding water to the pan is a total misstep. It caused the meat to steam and prevented the glaze from sticking and thickening. Also the seasoning didn’t get a chance to cook out properly. I would use this recipe again but just roast it properly. Also 350F was way too low.
