Rossana, your menudo looks delicious, but then all your dishes do! My dad is from Jalisco, Mexico. He's 93, almost 94, and been living with type 2 for many, many years. Now my daughter and I take care of him. We've changed what we eat, how we eat, how often we eat all to help him, but because YOU and Nelson have inspired us. I only use avocado oil, and olive oil, the kinds I see next to your stove. You are amazing and you're both such a blessing to anyone who watches your channel. We'll be praying for you, and Nelson. 😘

I’ve been making menudo for some time now and have finally came with a core recipe but always looking for other tips and ideas. You have it all down and don’t cut corners. Lately I been adding a little chicken bouillon and a little tomato sauce just to give the broth a more welcoming taste. Thank you for posting your recipe and sharing your life altering experience.

I was watching one of your episodes and saw your CGM. My 11 yo was diagnosed with T1D in Oct 2021, after going into DKA and having to be “Life Flighted” to Children’s Hospital. Great recipe! I have a daughter and she loves making Mexican food. I love making food for both my kids. I am originally from Mexico but live in the US. I too was diagnosed with type 1 diabetes and it has not been easy but I do my best to follow a good diet. My mom is also type 2 and I help her with her condition. I like the fact that you’re honest and full open about your situation with your diabetes. I am a diabetic myself a type two I have a hard time trying to find things that are good to eat and that still taste good not as much as it was in the beginning when I first discovered this is it now that I can’t find things it’s just finding new recipes that taste good, but yet keep the carbs down so that the A1c stays down I appreciate the fact of knowing someone like yourself that is a good cook and chef and have went to school to learn how to cook so that I can get special recipes from you that I have great flavors and I look forward to following your videos as you go through your challenges in life. Im sorry to hear you have diabetes as well... I completely understand, it's a rollercoaster of emotions and continuous work. A well balanced diet/carb counting is what allows me to enjoy my favorite dishes once in a while. And, I love that I can still enjoy Mexican food responsibly. Balance and portion control is key. Keep up the good work, Im happy to know I can be of inspiration. You are most certainly right about breakfast, lunch and dinner... When working in my youth we much preferred this on Saturday morning work days over a box of doughnuts. It gives you good energy for the day and removed any cobwebs leftover from the previous night. Maybe I should try to make your recipe, the one we would pick up on Sat. was quite red and now I know the difference.

I love how your recipes include all edible parts of the animal. This shows respect for the animal giving their life. I've only had Menudo once, but loved it. But the only way to get it is to ask one of my Mexican friends to make it. Now I can try to make it myself! I'll have to freeze it in single serving sizes though. 😅 The full story about your condition is relatable to me. I don't have Type 1 diabetes but type 2. I wasn't diagnosed until I was 40, though, and enough damage was done to my pancreas that I was (and still am) also insulin resistant. After 20 years I now wear a continuous glucose monitor in hopes to steady my numbers, lower my A1c and possibly get an insulin pump. I have 3 of the four things important to you. Prayer, good diet, great water intake. But due to several spinal conditions and diseases, exercise is extremely limited. I can only due light swimming (but have no access to a pool) and walking (which the distance length is limited). I'll be having 2 spine surgeries next year and hope the exercise limitations improve. 🙏 I'm also sending prayers to you that you'll always have full control of your condition. 🙏 I love, love, love many of your recipes and, of course, adore seeing Nelson. I look forward to your authentic recipes that are slightly adjusted to cater to diabetics. Thank you for being you. You're really special. 👍❤️

Can I ask you if you've ever seen menudo made where they add a piece of a cinnamon stick at the beginning?? I thought it was odd, and wanted to ask if you've ever tried it or heard of it.
the version we have in Texas is made pretty much the same way..but it most of the time has ..hominy..yum..good stuff .... love your videos. i'll give your recipe a try.

No, its not the same. Mexican oregano tastes grassy with citrus tones. Mediterranean oregano has more of sweet anise tones. Over all, Mexican dry oregano just pairs better with Mexican food. You can find the link to the one I use in the description area.

We have our Filipino style menudo. It's almost the same as Mexican but different meat and no dried peppers instead, a fresh red and green bell pepper. Oh, and tomato paste, chunk or sauce of whatever makes you happy...

Loving it. Menuda can't be eaten in a regular-sized bowl. You always need to bring out the big ones that are further up in the cabinet. Love the hair by the way.

It's usually hydrated and blended into a sauce (very common technique. ) You just have to take into account its dried fruit sweetness, smoky flavor and the fact that is mild in heat in order to add the right amount. It can be paired with other peppers such as guajillos and puyas (for an added kick of heat.) It all depends on what kind of flavor you want to achieve, balance is key. Hope this was of help!

Good question: If you are adventurous, the head of the cow is another option. If not, tripe and other parts of the stomach (omasum) would be good. . You could also make it with just the honeycomb.

Not always... some dishes vary depending on the region. Where Im from in Mexico, we don't add hominy. To be honest, I rarely see hominy added to menudo but like I said, it depends.
For the menudo, I don't have cow's feet can I use kangaroo's?? Just kidding.. what I'm wondering is are the cows feet necessary?? Also, why is there no hominy in your menudo? You don't like it?
😂 no, the cows feet is not necessary. The way it’s made can vary depending on the region. I grew up having it this way; having said that, I love hominy and have had it in menudo before. That will be another video recipe. 😊
