Mary's Nest hi Mary, I’ve been trying to make my own pickles with a salt brine and leave it at room temperature 72-77 degree - leaving it for 10+ days but my pickles are not getting sour. What am I doing wrong ?☹️ thanks for the help.

My grandma always said you absolutely needed to add bay leaves when pickling vegetables, she died this year at the young age of 99 and your video made me think of her wisdom and made me smile thinking of all the recipes she taught me and that time spent together. Thank you for this amazing video!

I started my first pickle ferment 2 and a half weeks ago and tried the first pickle today, it's a little soft. Wish I had seen this tip then but soo far I'm really happy with the flavor. I took off the tops and stem, I had heard before that there's something in the stem that helps it decay. Theory sounded reasonable atleast. If you've heard of this, let me know, as I did throw in peppers in the small overflow jar . Curious if they might have helped

@@Katalinmason Fermented sun pickles. Recipe. Soak and wash gherkins. Cut tops and bottoms off. Cut as liked. Quartered. Sliced. Or whole. If whole consider poking a skewer through middle to help penetration .. Bottom of jar. Stuff..... Dill, a few garlic sliced. A little horse radishes Root. Mustard seeds. Peppercorns. A chilli if you want. A little onion. And a bay leaf to top also a slice of lemon. Stuff the jars with all of above or a selection of ingredients from the list. Dissolve in 1 litre of water 4 heaped table spoons of salt. Pour over and push down veg with my "toppers. " Then take out to the sunshine. Cover to prevent flies. Leave for two to three days. Then bring in and taste. Cloudiness shows fermentation is on its way. Hope that's ok. I think I'll have to shoot a video on it one day. If you like the flavour refrigerate to halt fermentation. Lid Them. You can sieve out veg bits and Repack then lid them. Keep for a few weeks. Joe and the kids adore them. Full of probiotics and vitamins.

Hello, sweet Mary! Thank you for a video so full of information! I enjoyed it very much. I began making sauerkraut a couple of decades ago; I was taught by a sweet young lady who was new "over here" from Yugoslavia. She did one really interesting thing: she alternated hot and cold water with the salt. She wasn't able to explain why, but it was the most delicious sauerkraut ever -- even better than what I've made since, being too lazy to alternate water temps after all the hard work of chopping and bruising the cabbage. Just the information I was needing! Mary, you are a gifted teacher. I believe teaching is a separate gift on its own. My husband (Drummer) always says just because you can play an instrument doesn’t mean you can teach it. Same with cooking....the food arts!🥰 So many can cook, but not teach. You kindly understand and anticipate what someone at home might question without making them feel lame or needing to go find yet another video to clarify a step, and without too much blathering that wastes time. I didn't have any jelly jars, BUT, I did have the squat jars that diced garlic is sold in. They fit into the wide mouth canning jars as well. 😉

Tare out the weight of the empty jar. Put all ingredients in the jar plus plain, unsalted water and weigh it in grams. Take that number and multiply by .025 and that's is how many grams of salt to add for a 2.5% solution. For example if your ingredients plus water weight is 1000 grams, that's 1000x.025=25 grams of salt. Change the multiplier to vary the concentration as needed. .030=3%. .045=4.5%, etc.

For a while I even sold my goods on FB, but then I got sick then had so energy so I slacked off a bit and only preserve for my family. I also fermenting pickles several years ago. This is the question I just had. Everybody acts like that 2 tablespoons of salt go into the cucumbers. I was thinking the other day this is impossible? So I agree with you and I’m sticking with that.

Fellow Texan here, there is a craze with ppl canning dry potatoes and carrots no water added ... I know you have extended knowledge and I'm a standard cook I would appreciate your opinions on this and what is the reason for adding water ☺️

I learned from my dad using table salt to pickle vegetables, it’s the iodine that is the problem. Iodine is added to salt as a dietary supplement, but it will turn the vegetables black and unpleasant.

Next to the video you want to add captions or subtitles to, click the drop-down menu next to the Edit button. Select Subtitles/CC. Click the Add new subtitles or CC button. Choose how you want to add or edit subtitles or closed captions to your video

Select Add new subtitles or CC. Choose the language for the subtitles or closed captions you want to create. You can use the search bar to find languages that don't automatically show in the list. Select Add new subtitles or CC. Underneath the video, click Transcribe and auto-sync. Type all of the spoken audio in the text field. If you're creating closed captions, make sure to incorporate sound cues like [music] or [applause] to identify background sounds. Click Set timings to sync your transcript with the video.

Nice video, learned a couple of new things. The only thing I think is not true is that Chlorium kills fermentation. Salt is NaCl and splits in ions when dissolved...so Na+ and CL- (chlorium) which kills all other bacteria’s except the lacto bacillus. The chlorium in tap water would be identical. Point with tap water is things like calcium in the water lowering the Cl content in the solution or other minerals binding to Cl-. So rather than chlorium killing ferments it would be the one making fermenting happening, otherwise we wouldn’t use salt.

@@MarysNest yeah that's the same, chlorine is a gas however. The problem is that in the consumer market they call that chlorine as well. But regardless of this name thing, it's killing the bacteria like chlorine you use in the bathroom.

@@MarysNest regarding traditional food, just finished the jar for sauerkraut. A quiet traditional dutch way is: 2 kg of white cabbage, 2 carrots and a few juniper berries, a few black peppers and some chore seed. Ferment at room temperature for about a week a and 4 to 6 weeks in cooling or basement before usage. The salt however applied straight on the cabbage, mix and stamp and leave it for about half hour. This will drain a lot of most out of the cabbage so you don't need to add water. Than fill up the jar...

If you add two tablespoons of salt to two cups of water and mix it up good to make a 2% brine and then you scoop out one tablespoon of the brine mix that's still approximately 2% you have in your tablespoon. The same if you poured in only half a cup if it's mixed up well it's still a half a cup of 2% brine. If you dump all the salt into the jar and then add water to fill it up you don't know if you have an exact percentage of brine. For instance dump two tablespoons of salt into the jar and then only one cup of water goes in you now have a brine a 4% which may or may not affect the fermentation

I have given your process a try and, well, I didn't have anything to keep the cucumber spears completely submerged. So I have one or two pieces sticking up out of the water just about an 1/8 inch. Is this going to rune the whole jar, or just that piece? It has only been two days. Can I just poke them back under the water?

Hello Mary, Quick question: approximately how long does the typical jar take to ferment? I realize that it might be a matter of personal taste or how warm the kitchen is, but I'm wondering whether to expect it to take 3 days or 3 months? I'd love to try making the pickles but am curious about how long I might have to daily burp the jar.

Now THIS is the A+ youtube content I live for. NOTHING, and I mean NOTHING, beats a delicious, tasty, crisp, pickle. It's the only reason I get up in the morning. I chose them over my wife just like she chose the neighbor over me. Thank you for giving me one more day to keep going. pro tip: if you drink the pickle brine you can skip a meal to save money. I have to save money because covid killed the pickle factory where I worked. So now I'm livin off of pickle brine. (If you can freeze it in tubes it's almost like eating a very frosty pickle). Great video! I once made fermented pickles and in the bottom of the jar was an inch of a cloudy substance. I did not eat them. What was the cause of this and is it safe to eat the pickles with it?

Hi David, great question. Depending on the temperature in your climate, ferments or best refrigerated after about seven days. The fermentation process will continue in the refrigerator but at a much slower pace. However, over this time the pickles will absorb more Brian and the Brian will become less salty and the pickles we will become more flavorful. From it’s like to be stored at 40°F. This can be on the top shelf of your refrigerator, or in a basement or root cellar that may be able to maintain the temperature. Hope this helps. Do you enjoy making traditional foods? Hi Tim, That's a great question. It is not an exact science. There are videos and cookbooks where fermenters are weighing everything but our ancestors did not have those luxuries and yet were successful fermenters. I used your process in a fermenting crock. I used ceramic weights to hold the cucumbers down. They smell amazing and are perfect except they have white fuzzy stuff growing above the surface on the walls of the crock. No scum on top, so I assume it’s not kham yeast. But I’m still new at all of this. Should I throw it out or remove and store in the fridge?

So probably be good idea to cut one slice in a few pieces so you can taste a piece not a whole slice. Can you put enough water to be 1/4 inch above cucumbers ? Or is that too much

I watched this video and the one on fermented vegetables and you used 2 tablespoons of course salt here on a quart jar and you also only use 2 tablespoons of course salt in a 2 quart jar. I'm not sure how much salt I should use when fermenting cucumbers in a 2 quart jar. Enjoy your videos!!

I would think you could use any glass jar that you have a lid for and that you could "burp." The most crucial part would be knowing the volume of the jar so you could add the correct amount of salt.

I use white oak leaves, and himalayan sea salt from san frisco salt co. I quit using celtic sea salt after Fukushima melt down, I ain't eating nothing out of the ocean again. Celtic salt is made by letting ocean water evaporate leaving the salt behind.

I put about 6-7 bay leaves in my last jar of pickles to help them be crispy last week. They didn't work at all. I had gotten the bay leaves at a Mexican market (for cheap), so I'm thinking that in that culture bay leaves are from a different tree than the ones that are so expensive!

Hi Michele, Wow - I am SO sorry your pickles did not stay crisp. Hmmm...I am not sure what might be going on with those bay leaves. Maybe you are right - maybe they were not bay. Or could they have been very old? I wonder if age can affect tannin levels. Oh dear!! Probably best to stick with tea leaves. They are easy to acquire plus even organic is reasonably priced. Michele Michael* - Hi Michele, That is an excellent question. Tannins are what give tea that “certain” mouth feel so, that said, to a certain when a tea bag is brewed it would release tannins. But how much? Are any tannins left after brewing? These are wonderful questions. And worthy of experimentation. Like so many things in the “Traditional Foods” world, much is discovered through experimentation. We drink a lot of tea, so I will have to save some tea bags and try them in a ferment!! I've watched a couple of your videos, and love your thorough and charming presentations. However, I would like to respectfully let you know that adding whey or liquid from a prior fermentation is really not a good idea. The reason is that achieving the desirable lacto-bacillus acid is a process. Therefore, when you try to jump-start the process, your current ferment will not have benefit of that process and may produce something different than what you want, sometimes even something undesirable. Most ferments don't take that long.

That’s a great question. I generally don’t add garlic to my ferments because I am always worried about botulism. However, others have assured me that the chances are extremely low given the acidic nature of the ferment. Nonetheless, I don’t do it. However, I would recommend that you do your research and then decide what you want to do. Keep me posted if you decide to use garlic and how it turns out. How do we know which bacteria since we do the fermentation process without adding any prebiotic bacteria?could it be a harmful bacteria in the process? Thank u

Great question! You can certainly use a fermentation starter. You can also use a combination of salt and whey if you want to use less salt And introduce a form of good bacteria. However..You will know by the appearance, etc. if the fermentation has not gone well. It may develop mold or have a foul odor. So you should definitely be able to tell if bad bacteria has taken a foothold before the good bacteria has had a chance to kick off the fermentation process. So I learned something new this week or recently.. Apparently a lot of the new water treatment plants use chloramines instead of chlorine. So if you live someplace that has a new water treatment plant or an updated one.. You need to find out because it's going to take at least 2 weeks to air out your water.

Hi Maria, Thanks for visiting. HMMM...ferments usually are somewhat bitter and sour. What size jar did you use and how much and what type of salt did you use? How many days did you leave them on the counter to ferment? And are they now refrigerated? Often, it will take at least two weeks in the fridge for the flavors to mellow. Keep me posted. Love, Mary

You're one of few ladies who are a delight to listen to here. you're unpretentious, knowledgeable, and thorough. My Polish grandmother, years ago, used to pickle cucumbers just as you do here. However, she used to weight the cucumbers down with hardened ends of baguette bread or the hardened part of sourdough, rye, or whatever kind of bread she happened to have baked. She told us once that the bread helps wit the fermentation process and imparts a unique and pleasant sour taste. Another note, when she was pickling at a time when our vines had lost all their leaves, she used oak leaves from an old oak tree at the end of the property.

@@brigitteg440 be cautious using grape or oak leaves. The only batch that went south on me had grape leaves. My next attempt will be to steep the leaves in boiling water first. I'm in a humid climate prone to fungus so I assume that is what spoiled the batch.

Bread crust is a neat idea and I understand the reasoning. Raspberry cherry and horseradish leaves I use and also my red current leaves. I tuck a big horseradish on the top to keep the pickles etc down and just flip the jar upside down a couple times a day while fermenting to get things on top wet. Works like a charm even if anything does float to the top

Great video! Love the step by step process and explanation. I would also add that dating your ferment is important. I use a piece of scotch tap, fold over the edge of one end, use a magic marker to write the date, then place it on the jar. It takes the guess work out of when that jar was filled. And with the folded end it is easy to remove when the jar is empty and needs to be washed.

Yes or masking tape or freezer tape. I sometimes use wide tape and write my recipe used - for example on my pepper/tomato hot sauce ferments.

Regarding tap water and chlorine: Many municipalities now use chloromine (sp?) instead of chlorine. I believe it's chlorine bonded to some other chemical. The reason for that is so the chlorine WON'T evaporate out. Letting the tap water sit on the counter won't get rid of the chlorine, in that case. Not to mention fluoride and who knows what else. If you live in a municipality of any size, it'd be best to just forget about tap water.

I use a water filtration system on my faucet. I don't think my town uses that, but I hope the filters get rid of that too!

@@lorimast I'm NOT an expert on this, but I don't believe the filter will do it unless it is designed to remove chlorine itself. When they first started using chlorine, aquarium users were advised that the only way to remove it from the water was to ADD a chemical to break the bond between the chlorine and the other chemical it was joined with. Many of the filters on the market are designed only to remove particulate matter, such as lead and minerals.
