Hi Mary, I was looking for a recipe to pickle green beans in a water bath canner. I have been canning for years but never canned green beans because I thought that I needed a pressure canner to do so. I am so happy that I watched your video. My Mom used to make "Dilly Beans." It was the only green beans I would eat. She merely used the same brine for Dill Pickles as she did with the Dilly Beans.

Mary, thank you for this simple way to preserve green beans from my garden. This year, the drought prevented the beans from growing. But there's hope for next year. Nevertheless, I roasted chickens yesterday and made broth! My scrap beets are growing fine. Your videos are my Saturday appointment as I work in the garden.

Thanks for sharing. We're doing well. I packed up all of our dishes, cookware, and bakeware. Need more boxes for the small appliances and a few other things we're keeping. Still need to haul the two pieces of furniture I'm bringing and the storage totes. Trying to get a hold of Dad so we can use his truck to haul them. Plan to go there tonight and get the rest of my clothes and my kettlebells. I also think I left my headband visor there when I packed the other things. My poor retina's burn without it. Plus it absorbs any sweat on my forehead.

Instead of the pickle crisp, you can use a raw grape leaf, bay leaves or oak leaves for the tannin to keep the veggies crisp. I will not touch the white vinegar since I found out that it comes from gmo corn and I react to that product, which is also not healthy for us! Thank you for all of your information in this video. I've had my presto pressure canner for about a year, but I haven't used it due to fears about my glasstop stove. I love the process you use. It's somewhat more involved but it makes more sense to use this technique versus some of the other videos I watched to dill beans. I don have the equipment to do water bath so I will just do the frig version. How long can I expect they will last in the frig? Thank you.

Refrigerator pickled foods last about two months. If it smells fine then it's still okay to eat.

Using regular salt will make the liquid in the jar look milky. The pickling salt does taste better.

Your cloth for resting hot jars is very pretty, but I do a lot of canning and some jars can come out pretty messy/sticky/greasy. I use a double layer of cardboard from broken down boxes, which I think all of us get plenty of these days. They can be reused for some time and then burned in the wood stove or bbq. I keep a bunch in a space between a shelf and the wall of my pantry.

Hi Mary, thank you for sharing this video. I hoping that you might have a quick moment to answer this question regarding lids since you mentioned it in this video. I purchased a case of Ball jars and to my surprise a few of the lids were stuck to the jars. In this case are the lids considered used and not useable for canning? Hi Eraina, Great question! But it's a tough one to answer. You have to inspect the rubber seal on the lid. If it looks as though it has not been damaged, you may want to try and use it to can. But there is always the chance that it won't seal. In that case you would have to refrigerate your jar. Wish I had a better answer. Love, Mary

Hi Ronni, Because of all the vinegar, you do not need to add the citric acid. But if you are water bath canning them, you can add the "Pickle Crisp" (calcium chloride), if you want. Love, Mary

I’d like to ask a question several months ago I got s new flat glass top stove. Lady in the store said you should not can on it. I see some yt sites where they are canning on this type stove. Do you know anything about this? Thanks Mary

I couldn't bring my water to a boil (my stove couldn't handle the volume I guess). Do I have to trash my batch or can I wait for it to cool and then refrigerate?

Good morning Mary! Could I make refrigerator pickles with yellow string beans and this same recipe? I picked a bowl full from my garden this morning and thought I might make one jar to pop in the fridge. Would they behave the same way as green beans? I know they are a bit more tender.

I'm growing two varieties of green beans now in my container garden on my deck. One is a standard bush green bean and the other is Dragon Tongue. I don't can, but would like to try just putting them in the fridge. Do you think the Dragon Tongue would work as well as the regular green bean? Also, how long can you keep them in the fridge before they go bad?

Hi Betsy, I am not familiar with the Dragon Tongue green bean but you could experiment with some. Just pickled and then refrigerated, green beans can last about 3 months for their best quality. They don't go bad, per se, but after about 3 months they may start to become less crisp. Love, Mary

@@MarysNest Thanks Mary. I'll give it a try when I start harvesting the Dragon Tongue. From what I've read, they are similar to a green been. They are a pale green/yellow with purple markings. Apparently when they are cooked, the purple goes away. I did try your refrigerator pickled beets earlier this year. They were great, and my parents loved them.

I was wondering if you could recommend a hot plate that is the right size to hold a canner? My stove is old and takes forever to get boiling water in a small pot. Canners, forget it!

I use a cast iron burner that is made for the counter top. It's made by Cuisinart. It's not large but it holds my canner and comes to a boil quickly. Love, Mary

Great video thank you. A question about the books you recommend. There is apparently an updated version of the original Ball book on preserving (2020). Is this book worth getting in addition to the All New book of Canning and Preserving (2017) In other words are they essentially the same/similar or is it worth having both?

@@JP-np6rp - That”s a great question. I don’t have the newer edition of the Ball Book on Preserving but I do like the older edition. Yes, both books are different and it depends on how many canning recipes you want/need. For example, the older book has basic Strawberry Jam but the newer book has fancier jams. The older book has info on no pectin jams…old-fashioned jams while the newer one doesn’t. But the newer book has lots more pictures. So it is nice to have both. If you have a used bookstore in your area, look for the older one there. I have often seen it at the used bookstores in my area… And only for a few dollars. Love, Mary❤️🤗❤️

Since watching you do the canning im afraid to break my glass top! What is brand of the stovetop burner and where did u get it? Gas or electric. Ones online had terrible reviews

Hi Patti, I understand completely. I have a Cuisinart electric cast-iron burner. I have been quite pleased with it to use with my water bath canner. For cooking, it's another story. It tends to run hot, so I have to be super careful not to turn it too high so as to not burn my food. Hope this helps. Love, Mary

Great question. Three bean salad tends to be sweeter, so when you make your brine, you would want to add 2 tablespoon of sugar. If you don't mind a slightly darker brine, you can use whole sugar such as sucanat. Love, Mary

Hi Lynn, you can definitely add 2 tablespoons of sugar to the brine when you’re making it to make sweet pickled green beans. I have not tried sugar substitutes. Love, Mary

I am from India. I would like to ask you, what is the objective behind your pickling of various edible objects (vegetables, fruits, eggs etc.)? Is it just preservation for when these objects are out of season? I ask because I am confused. As I said, I am an Indian, and in India we pickle various vegetables and fruits to turn into an additional side dish, very tasty, and which take the process of eating food to an entirely different level. Please answer.

It was my frist time yesterday.i got cut on the lid,but I put medicine on it and im ok! 2 sealed and two did not! So the next day I repeated it with the ones I that did not seal.tricky! I have poor vision thats why I think the 2 did not seal plus I took the cap off right away after cooking but after listening to one of your tapes you said wait 24 hr! Opps!
