It is so easy and fun to create Rosemary topiaries. I actually start with cuttings I have rooted but you can find potted plants at nurseries and garden centers to use for this.
The scent is amazing and surprisingly good for you (stay to the end of the video and I tell you why) while you prune, trim and shape your rosemary plant into the desired end result.

I garden in Zone 8a in the mountains of N. California. Though that sounds warm it is a challenging climate for gardening here. I am surrounded by 200 foot tall conifers which block a lot of sun and we get heavy wet snows along with late Spring freezes, which can cause a lot of damage. On the west coast USDA zones are not exactly accurate. The topography of the landscape makes for varying micro-climates. Our last freeze is typically the final week in May.
