Eggplant Paste with walnuts:
Five large eggplants
750 g strained yogurt
Three cloves of garlic
Three tablespoons of olive oil
Handful of walnuts
A coffee spoon of chilli pepper
A coffee spoon of salt
Preparation:
We slit the eggplants in 2 or 3 places with a knife and roast them in a pre-heated oven at 240° for 45-60 minutes. We peel them after they're cooled down and chop them super finely. We take strained yoghurt in a bowl, add garlic and salt. Mix them and add the chopped eggplants. Mix them all together and take into the serving dish. We fry olive oil in a pan and add coarsely cracked walnuts and sprinkle chilli pepper on while it's still on. Good luck with it! It's a delicious paste that can take its place on the table for your special guests as well as your tea times.
