It’s been a while since we last made rough puff pastry. I was craving something savoury and spicy and decided to make another version of my old beef patty recipe but this time with a curried chicken filling. These bad boys are super flaky, crumbly, buttery, delicate, spicy, and extremely delicious. You can adjust the filling to your liking or change it altogether. Just be sure to not make it too wet.

I do enjoy Charlie’s Rough Puff Pastry recipes (and yes, I have made all of them 😉) and this one was no exception. I made the pastry dough Saturday along with the aromatic chicken curry filling and put in the fridge, cutting the pastry squares Sunday morning (was able to cut nine slightly smaller 5" squares), stacked them on a plate (with parchment paper between), wrapped them up and placed in the fridge until it came time to bake them. Filled the patties, crimped with a flour-dusted fork (I even trimmed the edges with a pizza cutter), double egg wash and baked for dinner. Shared with my brother and brought one to work for my "foodie buddy"). Oh, the flaky crust and the marvelous chicken curry - what a flavor combination!! Photos have been posted #335

One of my favorite Pattys of all time. My most favorite is a Jamaican spicy beef patty with cheese. I've even experimented and made oxtail Pattys, you make oxtails the traditional way, take everything out and reduce the liquid until it's a sauce

Oh, I do enjoy a nice braised oxtail stew - will try as a patty filling in the future! I have made corned beef hash patties.

Looks amazing, will try it with some chicken mushroom cream I´ve been wanting to cook. If I may, I can give you a quick tip. Whenever you´re using fresh chopped garlic, add it at the end, preferently before you add a liquid. For this filling, it would be after you pour the chicken but before you add the coconut milk, just about when you start smelling the garlic fragance. That way you won´t burn the garlic and will capture all of its smell and taste to your dish. Chef Jean-Pierre explains it a lot better, but trust me it is a game changer when using garlic.

Charlie you're amazing, all of your videos are hits. I was wondering, do you think you'll be doing some recipes about flavored bread in the future? Such as olive bread, cocoa or chocolate bread or similar loaves

That scotch bonnet looked too cute in its lil bowl. However I must confess Charlie, when I saw the beautiful colour of the pastry, I was thinking annato had been used! The reason for this assumption is due to a video on Jamaican jerk seasoning marinade I saw. In this video, the annato was used to add vibrant orange and yellows, just like turmeric is used. Very interesting because so many great spices come both from India and nearby areas, and many from the Carribean

This was one tasty patty - the turmeric in the dough gave it such a lovely golden color and the filling - OMG - a wonderful combination of ingredients along with the curry powder make for a flavor explosion! Flaky pastry, curry chicken filling, what more do you need? I might try making "appetizer-sized" patties to share at the office. Charlie has 217K subscribers - slowly but surely we will make it to 300K!!! I always appreciate a different take on the traditional Indian cuisine. Love this version. Although I have a question about using chicken thighs: Do you use thighs in your version because chicken breast is drier? I’m not a fan of thighs, but I know cooks use it because they end up with a more moist result. So, can I use breasts?

This is a Jamaican recipe not Indian. Jamaicans in Canada went to court and won in order to use the name Patty. America burger industry didn’t want Jamaicans to use the word beef patty. Everywhere else in the world it’s called meat pie. This cuisine was developed in Jamaica not India. The only thing that can be associated with India is curry.

You know someone is a pro when he uses chicken thighs instead of breasts 👍 I guess this filling would also work great in a Czech/Texan colache, made with enriched yeast dough
