‌40 gram butter or 3 tbsp
1/4 cup jaggery powder or raw cane sugar 1/4 tsp salt

Dear ravneet, to day I tried ragi cookies, with a lil twist, I used wheat flour along with ragi , rest all same, ....and cookies turned to be like as if I have bought from mkt, ..... ur 🍪. Recipes are so so simple, that anyone can do experiments by her own choice of flours , oils, sweetner. Too simple recipes. U always use same ratios, that makes your recipes very easy to follow. And no use of BP/BS makes them super duper healthy. Munching cookies will give no regret now to health buddies 😀.

Yes, the addition of curd or even milk is to Bind the dough. But the crispness comes from a range of factors, including whipping or creaming, sifting, not kneading the dough, and keeping it soft. My focus is on making food healthier and I run a baking series on cookies without baking powder soda. I do have an egg less cake and brownies recipe too without baking powder and soda. Ravneet, the cookies came out excellent, even though I did not take exact measurement of the butter and ended up adding extra Ragi flour. Also I used white Sugar, but they came out just fine. Thanks for the recipe.

Hey dear.. Welcome aboard.. You need an equal amount of milk for curd. In fact, for making crispy cookies without baking powder soda, for ever 4 tbsp of ghee, you can and should add only 1 tbsp of milk. Less is more. Add flour little by little until you get a soft dough. Hard dough gives hard biscuits without baking soda and powder. If you get it right, making healthy cookies at home will never go wrong. Let me know if there are any doubts. I have a cookie baking guide on the channel. Do check that too

Well, yes, you may... however, poha lends unique flavor and crispness here..no problem dear...you may use dry coconut flour or powder ..increase the amount of coconut by 2 tbsp

Hi ravneet..please recommend the brand for jaggery powder that's available to be bought online in Noida..i have tried many brands of organic jaggery powder ....but they all have lumps and i end up sieving and getting very less amount of fine powder that could be used for cookies...so pls suggest the one that can be used in cookies mostly

Hey dear, you may go for organic India or even the one that big basket sells as its own brand. I find it good enough for cookies. As far as lumps in jaggery powder are concerned, there's a way out here. You may grind it to powder along with 1-2 tbsp of flour that you intend to use in the cookies recipe. Then sieve it.. It works

Hi Ravneet, this recipe of yours is very different with tulsi seeds, curd etc. Will surely try this. Some questions: 1. You usually add only milk, So Any particular reason for adding curd this time? 2. What's the brand of jaggery powder you use? Any recommendations? Whichever brand I try, they come in lumps and it's very difficult to sieve. 3. Also, how much time does it take for you to cream ghee/butter and jaggery? Ever since my electric whipper broke, it's taking so long to whip the butter and lumpy jaggery 😪

Sorry for the delay in response dear. I have been down with fever. Regarding your questions, 1) you may use milk as a curd sub...I often use curd..no specific reason for that. 2) I use mother organic usually. But these days, I m sourcing from a local farmer. All types of jaggery have grits, no matterwhat. I suggest grinding jaggery with little amount of flour. that should help. 3) I do it with hands and it may be quicker in winters than summers. 3-5 min, I guess, may be longer.

Hi Ravneet, i tried this recipe..keeping everything same..i added kaju powder for flavour in it..and to make it more rich...but with dryness from all kinds of flours(ragi,oats and poha..all kinda dry flours) i believe they turned out dry cookies...and less sweet as well...anyways...i wanna try again...will adjust the sweetness...but pls suggest what should be added if incase ragi cookies turn out dry..look forward to hear back from u...also which other flavours will go with these cookies apart from tulsi

Dear, when you replace butter with ghee, the flour to fat proportion will change too. You will need at least 2 tbsp less flour for ghee. Additionally, never dump flour at once.. Add little by little and stop adding flour once you get a soft dough consistency. That ll give u crispy biscuits without baking powder and soda.

My dear, when you bake cookies without baking powder or soda, you may vary and alter the flour. Use whatever flour you wish to use. All you need to keep in mind is the dough consistency. It has got to be soft. So I always suggest adding any flour in small batches and not dump it all at once. It ll give you the best results.

hello, yes, for baking cookies in microwave, you need to turn on the convection mode..then bake the cookies at the same temperature and time...check if edges of the cookies have browned slightly..if so, they are done...if not, then you may bake for 2-3 mins longer..hope that helps.

Hi, thanks for watching. Well, i do not buy white sugar so try to substitute it with jaggery, cane sugar, coconut sugar, among other mineral-rich sweeteners. We need powdered jaggery here since our purpose is to cream it with ghee. You may try grating solid jaggery and then cream it. The reason we use powdered jaggery is to ensure that it is fully incorporated into the fat. Otherwise solid jaggery might not mix well with ghee and then ooze out while baking. You can try a small batch instead.

@@kh7947 then you should not get lumps in that case.. Just mix it well.. Then add 1 tbsp milk and whip.. That should work.. If it looks too loose after creaming, shift it to the freezer for 10 min.. It ll set well and creaming would be a breeze... Then immediately sift the flours and bake.. I use organic india jaggery and love it

Yes, you may. But this recipe uses poha or flattened rice...if you wish to combine ragi with whole wheat flour, please add flour in small batches until you get a soft dough consistency..we r not using baking soda powder so the dough should be soft to make crispy cookies without chemicals..let me know if there is any confusion

hello, yes, you can use solidified ghee..refrigerate it for30 minutes before using...remove from the fridge..mix with jaggery/caane sugar and whisk immediately...use 4 tbsp or 1/4 cup of solid ghe

Hello you can bake healthy cookies without oven too in a coooker or kadahi..j have posted a few biscuit recipes in kadahi..will paste the link below...as far as giving this cookie to an infant, I suggest waiting for the baby to turn at least 1 year old before giving them jaggery or adding multiple grains to their diet. Have you started feeding the baby with all the ingredients used in the recip? Please do not give them anything new without testing how their body responds. When you give them a new ingredient, give in small batches and wait for 3 days to see how their body reacts to or. Then onlh you should include that ingredient in their diet. Make homemade cerelac or horlicks for them instead. I ll soon post feeding biscuits for kids on the channel. Keep the cookies in an airtight container upon cooling. They should stay good for at least 10-14 days..i make small batches that get over in a few days.

@@dishajain8953 I often use plain oats since I add it to my rotis. Last time I bought rolled oats and steel cut from NatureVit. It's good. But I have not used steel cut in any recipe except dosa. You may choose any brand.

Then it shouldn't be hard if dough was soft dear. May b you baked it longer in oven..always bake for a less amount of time than given in the recipe because each machine behaves differently

Hello dear, the idea is to use dry jaggery powder. Since we are not using raising agents in the cookie recipe, you will need dry powder. Else, jaggery might ooze out of the cookies while baking. There is a danger of wet jaggery melting quickly and burning too. I always advise using dry jaggery powder. Moreover, you might get chewy cookies. We are looking for crispy bites. Wet jaggery might give you soggy center.
