How to Make High-Protein Plant-Based Greek Soy Yogurt

It’s surprising how many vlogs I film that actually have nothing to do with the food that I eat. But this week, we are in my kitchen making vegan Greek yogurt. I have searched high and low for a plant-based yogurt that tastes good and is high in protein. But I’ve never found one. So I make mine own, and this week I’m sharing the process with you.
Start with a really pure soy milk. I use West Life brand, organic unsweetened vanilla flavor. You need to pick a soy milk that doesn’t have the added vitamins and minerals-that will ruin your yogurt.
2 quarts makes 1 batch, or 4 quarts for a double batch. This is quite a process, so when I make it I make a double batch. And you’ll need a pressure cooker, I use an Instant Pot Pro Plus. With this cooker I don’t have to heat up the soy milk before starting the overnight cooking process. (You can do it in a yogurt maker or even just in the oven with the pilot light but with an Instant Pot you don’t need to heat up the milk, which saves a lot of time.) You’ll also need a starter culture; this is available in a vegan option-one packet per batch, two packets for a double batch. And then you’ll need a Greek yogurt strainer.
I add 4 quarts of soy milk and 2 packets of starter culture to the Instant Pot, stir it together, then set the Instant Pot to the yogurt setting. I set it to cook at 110ºF for 8 hours. I typically set this up before bed, and it cooks overnight while I sleep.
In the morning, the yogurt needs to cool and set. So you take it out of the pot, cover it with foil and let it stand for two hours. After two hours, the pot of yogurt goes in the fridge for about 12 hours to set. At this point, you have soy yogurt.
Then I like to strain it to make it into Greek yogurt. I use the Euro Cuisine Greek Yogurt Maker. Drain off any excess liquid that you can, then pour it into the yogurt strainer. Once the yogurt is in the strainers, let the whey drain off in the fridge for about 48 hours. The yogurt will reduce by about half its weight.
Scoop it out of the strainer and into two glass storage containers. Whip it up to smooth out as many lumps as you can. I find that a double batch of Greek yogurt will make 8 days’ worth of breakfast portions, that’s one 8-ounce serving per morning.
And a tip: the morning that I open my second container, that’s the day I start making another double batch. If you do that, then you won’t run out, because it does take three days to complete the process of making this yogurt. But honestly, overall, it’s no more time-consuming than doing a load of laundry. It’s just a load of laundry spread over three days.

Love the Bengal cats! I use probiotic capsules (empty the contents inside the capsule into the soy milk) instead of yogurt starter. Something important to mention is to make sure your instant pot and anything that touches the yogurt is sanitized - I pour boiling water over it and let it air dry before I make the soy milk. I've had failed batches and the experts said to sanitize everything to keep that from happening. I also sanitize the bowl the yogurt is stored in. Love this!

I really appreciate you made this video. This is a great vlog, I love it. I also like to mention that if you have instantpot and a high power blender like vitamix, it's super easy to make pure delisious soy milk. I soak soybean in water for a few hours (about 6 hours or over night) until the bean got much bigger, then cook the bean in instantpot for 45 minutes with high pressure, then blending with ratio one to three (soy bean to water) in the high power blender for 1 minute or less. The best authentic soy milk is done. PS. the ratio of bean and water might not be the same as the store bought soy milk.

Oh my gosh, I started making soy yogurt for the first time today. (After making soy milk from scratch first). I have been consistently bright for 190 days (But have been doing bright lines on and off since the fall of 2019. I'd have stayed on it if it wasn't for addictive cycles I didn't know how to break out of. I've learned each time I've picked myself back up). ANYHOW - you are SO RIGHT about the vegan yogurt options in stores. (And many are LOADED with sugar!) I appreciate you sharing how you make this because I've been trying to figure out WHAT TO DO. Now I need to order a EuroCuisine yogurt filter. Thank you so much! And I loved your helpers for this video. I'm going to share this video with people who I believe would appreciate it.

Nice video, making my first batch ever of Soy yogurt today. This is going to be very helpful as I have the same strainer and usually strain it for 12 hours, always prefer the greek form as you do. I like to save some of the way for the next batch at least thats what I have been doing with the dairy version. Really wanted to get away from so much dairy, happy to see your soy yogurt turns out so thick.

I absolutely LOVE this video. I've been wanting to see how to make yogurt in the instant pot without using the "jar method " cause I knew I wanted to strain it for a thicker consistency. It is very easy to make your own soy milk too, and much much cheaper, plus not pasteurised, you can control quality choosing non GMO organic soy seeds and ideal to make your own soy yogurt. I guess many people choose easier option, but it doesn’t really takes a lots of time - BTW your cat is sooo beautiful!

Great video! A family member has ulcerative colitis and we needed to switch to a whole foods plant based diet rich in probiotics for her. I became a pro at making our own yogurt. Our soy milk is just soybeans and water and it’s sourced from an oriental good market…super inexpensive. I use probiotic capsules to keep costs down(each brand gives the yogurt a different flavor profile so experiment)(our current favorite has 14 different active probiotic strains). I just use the oven with the light on and leave it for 15 hours. It’s pretty thick by then but we do strain it with cheesecloth if we want to make dips with it. We never discard the whey since I believe it’s likely loaded with probiotic. We just drink a bit of it every day. I loved seeing your strainer. It will definitely be easier than the cheesecloth. Wonderful! Now I know how to make yoghurt from other types of milk. Would a cheesecloth do the same thing as the Euro strainer? I have lots of cheesecloth to use so I'd consider that for myself.

I have an instant pot & yogurt setting. It defaulted to 180 degrees & was to adjust to boil. I believe it will boil for 8 hours. Is this okay?

You can even freeze the whey in ice cube trays to use as the starter for the next batch. I always used to do that for regular dairy yogurt so I don’t know why it wouldn’t work for plant based yogurt as well.

Good explanation! No need to buy so many gadgets especially because you’re mentioning environment. The straining can be done in a muslin cloth in a colander with a bowl underneath.

the whey is where most of the proteins are actually.....the whey is not waste, it has lots of uses. i wonder what you will do with it? how much is your serving? 1/4 cup? 1/2 cup? 1 cup?

yes... I have an Excalibur dehydrator I use; remove the shelves & set container in. BAM! Same process but I do heat my milk 1st & let the dehydrator hold temp. I rotate the bowl 2-3 times to make sure even heat cuz I'm like that 🤪 Then the rest of the steps until the draining; that can be done with a strainer lined with layers of cheesecloth. Simple. You can use other appliances like convection type air fryer ovens if they go low enough for a yogurt setting. Be creative! I can't eat soy & I have zero issue with animal protein so I use quality canned coconut milk & add Zammex mulit collagen, a spoon of gelatin to make sure it stays homogeneous (I like the bulk & use it in SO many ways I don't strain it) & a bit of acacia fiber to help emmulate the 'sugar' content of dairy milk for the bacteria to eat; though I use the same vegan culture that Susan uses. I agree with her! Homemade sugar free plain yogurt is SOOOO tasty & universal! I make my own mayo; use that, the plain yogurt & my own non-dairy ranch dressing spice blend for The Most Deee-licious, clean Buttermilk Ranch You ever tasted!! Plus the yogurt also stands in for non-dairy sour cream etc. in other applications & recipes; of course with a lil fruit for sweet yogurt or in homemade non-dairy frozen confections!! The uses are myriad!! AMAZING not only how it tastes but all the ways it can work in a clean eating life!!! WIN/WIN!

Jut made this last night with same Westlife brand with vanilla according to her directions. It is sitting at room temp for 2 hours now but it is still very watery. Is this normal? I have made soy yogurt without the vanilla but I usually set it for 10 hours in my instant pot and it is thick. Wondering if I should cook it for longer?

That is a useless reply to post. lol I will answer it a little better. I did the whole process like Susan described and the yogurt is perfect. The fact that it was so liquidy might be due to only 8 hours in instant pot. I really like the taste of it using the vanilla soy.

Susan-please tell me how you came up with 18-30g of protein. This has been debated on the BLE Facebook group for some time-people (me!) are confused and need to know how you came up with that number. I need to track my protein for my doctor and I really hope you can answer this once and for all.Thanks!!!

Hi Amy! Susan says in the video that the milk she uses has about 9g of protein per 8 oz serving. When she strains the yogurt to make it Greek-style, it reduces the volume by half, which means the protein is now doubled in concentration. So a 8 oz serving now has 18g of protein in it. We hope this helps! 🧡🧡

So...kitty just got done taking a dump in the litter box, did the scratch-scratch...and now pads around where food is prepared, spreading cat dander, cat hair, and toxoplasmosis with every little footstep. YUK.

Exactly what I was thinking. A food hygienist's nightmare. Noted all the love for the cat - all very fine - but when we're talking about adding healthy bacteria to yoghurt and then the cat decides to pay a visit and is even allowed to put their head over the instant pot! That cat might have just been licking it's own . . !

I was just doing a little research and it seems that the undiluted whey doesn’t have that much protein by itself. The (dairy based) whey protein shake powders that they sell have whey protein isolate so they’ve extracted the protein out of the whey and concentrated it. 🤷🏻‍♀️
