Wow... you never been to a wet market before? Look honestly, cleaning seafood takes a lot of water. This is restaurant so they will use quite a bit. But if you been to a fish monger, they go through tons more water everyday.
You're right. But If fresh water fish grown by farming to prevent infection of parasite, You can eat sashimi. These fresh water fishes for sashimi needs delicate care.
You are thinking of Big Head and Silver carp probably...common carp like the one in the video has way less bones, not too far off from Salmon I would say.
There is almost no need to worry about parasites when farming fish using clear streams deep in the mountains where there are no people. Of course, the risk is not completely zero, but...
Wild ones, yes! But farmed carp like this have a more controlled diet and live in clean waters, so they don't have the bad smell/taste and other issues that wild carp would.

@@12-6curve9 제가 알기론 비늘있는 민물고기는 거의 대부분 존재하는걸루 알고 있습니다. 예외로 쏘가리의 몸은 뚫지 못해 학계에 보고된적은 없다고 알고있구요. 감염됐으면 치명적일수도 있어서 좀 걱정이 되네요. 더군다나 수로의 물로 키우는걸루 아는데 반 양식? 정도로 해야할듯.
