Kombucha is a fermented tea that you can easily make at home. And making homemade kombucha is really easy. First, you brew a batch of sweet tea. Then you ferment it into something delightfully flavorful and infinitely customizable. And once you get started, you can brew batch after batch.
In this video, Erica from FarmSteady shows you how to make your very first batch of homemade kombucha using a FarmSteady Kombucha Kit. But whether or not you have a FarmSteady Kombucha Kit, this video will walk you through the entire kombucha brewing process no matter what equipment you have.
Erica highlights all the necessary equipment to make homemade kombucha from scratch, the ingredients you'll be using (including green tea and raw cane sugar), some basics on Kombucha SCOBYs, and demonstrates the brewing process from start to finish.

Hi, what's the difference in the Kombucha glass jar and the fermenting jar?

No difference! The kits come with different things but both include the 1/2 gallon glass fermenter that could be used for either kombucha or vegetable ferments.

I just brewed my first batch of kombucha. What do I have to do now with the scoby? I’m new at this so any help will be appreciated.

You can move your SCOBY to a fresh batch of tea, and you can let that sit at room temp. for a new batch of kombucha in a week, or you can store it in the fridge to slow things down! Find out more here: farmsteady.com/kombucha

the texture of my scoby is slippery, slimy and misshapen, yet has a good coloring..is it still usable?

Glad you enjoyed it! We don't have a video about growing a SCOBY from scratch but you can definitely do it using a very similar process - there are lots of recipes online!

so you keep the same SCOBY forever? and just add some of the previous batch in each of the next batches??

That's right! A new SCOBY will also grow with every batch of kombucha. You can give these away to friends or get multiple batches going at once. We keep ours and they eventually join together and form one really thick one. When it gets too thick, we just peel away old layers.

Hi, i am making kambucha for the first time without scoby and using ready to drink kambucha. I am using flavored kambucha. It's sitting for a week undisturbed and now I am seeing white patches or mould on top layer.. Is it goos to go..

Hi! When trying to grow your own SCOBY you should use unflavored kombucha. You can also get a SCOBY and starter tea on our site: farmsteady.com/shop/kombucha-scoby-replacement

Great question. You definitely need a SCOBY to start your first batch. But once you have it going it will clone itself every batch so you can make kombucha forever. You can check out ours here: farmsteady.com/shop/kombucha-scoby-replacement

If you can't get a scoby you can make one with unpasteurized, unflavored kombucha bought from the supermarket. I recommend using half a bottle of GT'S original Kombucha poured in to a small container of sweet tea and let it ferment until a nice thick layer of scoby is formed. Then you can use this as starter liquid for a bigger batch.

Great question. To slow down fermentation you will want to refrigerate (otherwise it will keep getting more and more sour) but can definitely drink it right away.

Once your kombucha has finished fermenting (and carbonating in bottles if you choose to carbonate) it is best stored in the fridge!

So I have a dilemma,more of a brain fart. I've made kombucha years ago but now with so much variation on how to make it, it's driving me crazy. So, I have my SCOBY that I just created, I discarded the tea I made it in, so now I'm ready for the first ferment. I brew my tea and add the sugar add my SCOBY but where do I need starter tea again for the first ferment? I only used starter read to make my SCOBY but since I discarded the tea because it took a good 4 weeks to make SCOBY, tea is obviously too Vinegary to use for starter, so back to initial question do I have to use another bottle of plain kombucha again and use that to start ferment again? And secondly, once I get my SCOBY hotel going,how can that possibly be used as starter tea if tea has been sitting for awhile? Thanks for video.

Hi! So we always reserve 1/2 cup of starter from the previous batch of. kombucha. Even if it is a batch that's been fermenting for up to 14 days, we reserve a 1/2 cup for starter and just taste the new batch periodically to make sure it's not getting too vinegary. If you've tossed it you can totally use an unflavored store-bought kombucha. As far as a SCOBY hotel, we wouldn't recommend pulling starter tea from that. We use a 1/2 cup starter for a 1/2 gallon batch without issue. And our SCOBYs are packed in more than that. What amount do you use?

We ferment quite a few things (with varying amounts of acidity) and know there is a lot concern out there about fermentation and metal. Because we ferment a ton, pretty much everything in our kitchen is stainless steel which in non-reactive, works great and most commercial ferments are actually done in stainless steel tanks. The issue is when acids come in contact with a non-reactive metal (like aluminum, which you definitely want to avoid). But that's only a concern after your kombucha is fermented (before that it isn't acidic so no need to worry about heating up your tea in an aluminum pot). We love a good wooden spoon too, but it is porous and can harbor other bacteria so we don't normally use one with kombucha.
