Papaya is one of the most favorite appetizer in Laotian Culture. The texture is crunchy and very neutral in taste. So we add a little sweet, salty, spicy, and sour ingredients and flavors to it, creating the very Famous, "Papaya Salad." 🤤
Today, I will teach you how to make the sauce that goes into making Papaya, but instead, we will use this sauce in other Vegetables other then Papaya. The Crunchy Cucumber 🥒, The sweet Carrots🥕, Snappy Long Green Beans, Sour Tangy Mangoes, and the Slurpy Ka Poon Noodles.
I will call this, "Thum Mania." 😭🙌🏻🙏🏻
This Thum Sauce can be paired up with almost anything. Try my recipe and use it to "Thum Everything".
Recipe:
-Wash, Rinse, and Shred the Papaya, Long Green Bean, Carrots, and Mango.
-When Shredding the Papaya, use a shredder to avoid injury. Or Shred the Papaya by Knife if your a Pro. Cut and shred to desired size.
Building the, "Thum Sauce." 😬
-Add These ingredients to the Pestle and Mortar.
-Add 100 Peppers (or what heat you can handle, remember 100 pepper should equal out to about 17 peppers per serving) and 12 Garlic Cloves. Smash them together! be careful not to get the peppers in your eyes. It can ricochet when smashing the peppers and garlic together. This can be as deadly as pepper spray, JK! 🥵
-Smash these to your texture desired, if you want the peppers to more whole looking, don't smash it completely. It's really up to you (Visual Presentation).
-Once completed, add 3 tbs of Shrimp Paste.
-5 tbs of Crab Paste.
-Pa Dek (Fermented Fish Sauce, Optional, add how much you want).
-5 tbs of Palm Sugar (Optional, sliced them thinly).
-2 cups of Sugar
-2 cups of Lime Juice
-1 cup of Mono Sodium Glutamate
-1/4 of a cup of Tamarind, or Tamarind Concentrate (optional).
-1 cup of Fish Sauce
Time to, "Thum 👏🏻 Mania 👏🏻.”
Pour the Thum Sauce to your desired Veggies or Noodles!!! Have fun! add more or less of what you like.Create a Thum Platter! pair them up with Laos Sausage, Seen Lorn, Yall, Som Nam, Cabbage, and etc... Everyone makes, "Thum,” differently. So you have to adjust it to your taste. One common thing is that the ingredients are almost always the same 🙃.
