Hello, Jeff here from the United States. I just found this episode recently as I have tried to follow you for the past years. Maple is my favorite. I recently watch an older couple making maple butter/cream and also maple sugar. We in the states have mostly been brain washed to regular store bought pancake syrup so to speak only to be educated from some canadians and northern residence in Vermont and other areas educating us what real maple syrup is like and though it is pricey you are getting the real deal, no store bought cheap sugary syrup. I love my maple extract and I love the Madagascar vanilla. I have bought a bottle of Crown Maple Organic Maple Syrup, Madagascar Vanilla Infused from Amazon and it was delicious. Do you have a favorite. I do like the robust flavor Maple but would like to try some other brands. Wishing your and your wife and daughter a Merry Christmas. I so miss watching your dad. I live in northern wisconsin by lake superior and found this very informative....I am surrounded by sugar maples....some of them are huge. Never had the time to give it a try but that ends this spring. Usually a couple friends give me a quart each year and it is a major treat. This year I will pay them back. Thanks for the video. this was really wonderful! This answered a few questions, but now I have a few more questions. How many days are you tapping your trees for? Say you have below 0 temp Christmas week, and you drive your spiles in on New Years Day, how long do you or can you collect sap from one large tree? if you have a giant walk-in freezer with the ability to keep your sap at zero how long can you store your sap before reducing it down into syrup? Will it go bad if I decide not to boil it down until Spring? Have you made maple sugar granules? How do you make black syrup - think they used to call it B or D Grade? a table spoon of that is like eating a whole piece of cake, was so delicious. thank you
It's almost sugaring time In NE Pa. I've been making my own syrup for years. So I just let my grandkids watch this so they knew what we were going to do next weekend. They can't wait
I've heard that it is also very important to bind the tree where you putted in the taps or put a fitting stick in the whole to prevent insects or other organismes harming the tree. Btw, very nices videos :)
Wow wish I could be there to smell the maple sap boiling and the smoke all mixed with the crisp cool air! Great series of videos and thanks so much for taking care of the trees.
The way to reduce the bubbling over is to put a tooth pick into a stick of butter then but a tiny bit into the the bubbling syrup but not much or you will have to label your syrup butter maple syrup, a trick used my many.
I live in New Jersey, and although it isn't always super cold here we usually get a week or two of below freezing weather. I am ordering the equipment to do this......very informative video. I will be scouting out sugar maples this fall. Thanks!

I remember something as kid about using milk to keep the sap from boiling over in the final boil. That was a long time ago and that's all I can remember . Have to do some web searching.
Now that is dedication. All that work for so small a reward. But, having said that, I've never tasted real maple syrup before and I'm never likely to either, being as I live on the southern tip of Africa. What passes for maple syrup here is probably synthetic flavouring. Also, I cannot imagine that level of cold. I'd never get out of bed. Good work though.
great vid! i use a large stainless pot on a propane turkey fryer setup. i get about 3 quarters of a gallon of syrup per 5 gal propane tank. (finished inside on range with evaporation hood.) comes out to about 15 dollars. 12 for the tank and 3 for electricity. this year I've used 3 tanks and i have almost 2.5 gals of the yummy! not as expensive as you would think...
OutsideFun1 Just a quick question, I haven't yet made my own maple syrup, but for the taffy could I use Maple syrup that I bought from my local Farmers Market?

To avoid the lengthy time finishing inside... Boil it in stage one to 215° then add d.e. and filter ( I'm still torn on which filter is most efficient and cleans best) .. Then bring it inside and cook in smaller batches. Also purchase a decent hotplate is great but finishing inside is key to controlling foreign particles from blowing into your product. Use common sense and you'll see its easy . I love the fire though guys its homey I want a property with a mini sugar shack to continue my hobby further
What are you using as a "wood stove?" We have just started making syrup but so far it's too windy for us to work outside (no sugar shack lol) what are your pots resting on?

Arthur Haines avoids plastic when collecting sap, since all plastics will transfer synthetic chemicals to whatever food or drink comes into contact with them. He makes his own spiles from the branches of some tree or shrub that has only a soft pith inside. You and your viewers may enjoy checking out his videos. He also has a primitive living skills school, and has written books, including 'Ancestral Plants' on the use of wild plants.
Holy crap that's a cool forest where do you live? I'm in southern California the nature here sucks unless you live out of the city I live in the valley it's ok but I'm more of an outdoors guy but unless I move out can't get anywhere out
when i tried it, it started to get really frothy and almost boil over, and temp went to the target temp in seconds, i tasted it and it was starting to get grainy and very very sticky, i figured it was done
This is why there's rules for minimum tree size for tapping, and amount of taps per tree. It drips pretty good on a nice swing in overnight lows and daytime highs with sun, but it does slow down and there's plenty left for the tree itself.
Organic certification in Vermont requires us to use no more than two taps per tree and a tree diameter of at least 8 inches. It’s big business. But Zi am trouble this year. Work took me away and I need to produce a min amount to maintain my general use certification. I need to pull about 16,000 gallons of sap. Oops! Will figure it out!
How long will real Maple Syrup keep fer? I have some since 2011 in one of those glass bottles shaped like a leaf. Dispalyed, sitting on a window sill x 3 years. Afraid to drink it.
Send it to me and we'll use it! :) In glass, it went in hot enough to be essentially sterile... it should be fine! We should all be aware that food and drink in contact with plastic will take up synthetic chemicals from the plastic, and the longer the contact, the more synthetic chemicals will be transfered.
Doreen Stirling I've never been given a solid answer as to when maple syrup expires. I believe maple syrup is sort of like honey in it's shelf life. I've kept maple syrup for a year or two in the fridge without any issues.

Just get to Pembina North Dakota and walk the Railroad tracks into Emerson, Canada. Thousands have done so in the last two years. Yes! It's has a little sweetness to it and I drink liters of it. There are all kinds of natural minerals in it also. I say it cleans my kidneys too eh.. Ü
+Cade Broos I can see how you'd think that, seeing as how black does attract heat; however, I find that covering them with garbage bags is better than not covering them at all. In the previous years, I noticed that the clear type of jug that I use acts like a sort of greenhouse. The sunlight would get trapped inside them and cause the sap to warm up, causing condensation to collect at the top of the jug. But when I covered them with garbage bags, the problem was fixed.

+OutsideFun1 i dont know about sap but with water , white or clear containers allow algie to grow in the light but if the water is blacked out nothing will grow , life needs light , your probably best staying with black , , i repete i know absolutly nothing on sap
