I have not bought shop mayonnaise for years as it is so quick easy and cheaper to make your own........... I add chipotle powder and lime juice to mine........... Frugal tip on how to make different flavour mayonnaise: just look at the expensive jars in Wholefoods and read the ingredients. Always start small and then you can add to taste. Heidi, yours was the first ever recipe I used to make my own mayo, last year I watched a video where a chef added whey from yogurt to make it probiotic and also preserves it a bit longer.... so now, I simply add my whey to your recipe ... yum 😋 I so love and appreciate ALL your knowledge❤

In the classical french recipe, there’s only one egg, it’s a bit more stiff like that. Lemon juice replaces vinegar and Dijon instead of dried mustard. Thank you for all your excellent and lively videos!

Patrick hates dijon mustard so that is certainly a no here, haha! I use homemade vinegar because it is cheaper than lemon juice :)

I’ve tried to replicate my grandmother’s mayo recipe for years. I know she did it in a blender. I remember her using Wesson oil, eggs, lemon juice. I wish I had paid more attention :/ .. She always kept the fixins for a Club Sandwich in her refrigerator, baked ham, bacon, roasted turkey, sliced cheese, tomato, lettuce. She was a traditional 1950s - 1970s housewife.

After watching your video I searched 'mayonnaise' on YT and found a channel that adds two tablespoons of liquid from an active ferment, leaves the mayo on the counter for six hours to get the ferment started, then puts it in the fridge - seems this allows the mayo to be good for MONTHS. Thought I'd mention it here in case others have tried it, since I've never made mayo before (but my provider told me it tastes SO much better than store-bought that I should try it).

@@cmvr9138 Whatever she happens to be fermenting, she spoons some of the liquid out. Might be vinegar, kimchi, kombucha, sauerkraut...she just uses whatever she has available.

My post went before I was done. But I agree with you. And yesterday on the 3rd try I drizzled the oil in slowly. Then added all the broken mayo. I had enough for my coleslaw and enough for the fridge. So it all worked out. You have so may good teachings. THANKS!

I thought about having Patrick make me one but two reasons I decided against it: Counter space and the fact that it is just not necessary as I created my bread recipe to be just the right size to last us through two days and also plan my meals around that. :)

Thank you Hiedi! 🙏 This is very similar to how I make my mayonaise. I've also found that adding a little lemon spice or even lemon juice gives it a nice tangy taste, especially good when serving with some type of fish.

I made it into a Qt mason jar as my stick blender fit inside. I also added 2 tbls fermented liquid from my cabbage. It almost lasted 2 mos in the fridge but we ate it all up!

I make my own mayonnaise as well with all your ingredients except I use grey poupon mustard and I add some lemon juice along with the apple cider vinegar and 1tsp. of warm water helps it emulsify. I'm using the extra light tasting olive oil, but, I'm open for alternatives. I blend my with a stick blender in a pint jar. They say it should only last two weeks max. Mine never does, haha. I will definitely try using avocado oil, but, it's so expensive where I shop.

I was just in the local grocery store and they had brazil nuts in the shell in bulk for $7.99/pound in a bin/loose box/ bulk. I love this recipe for mayonnaise, and passed it on to my sister!

I love to see other people's recipe for mayo. I have wound up combining several recipes I have seen. I don't like olive oil mayo either but I have also found that avocado is not my favorite. What I have found I like is the Chosen Foods blend...safflower, coconut, & avocado. As for the eggs I do use one whole and one yolk and just give the white to the dog with his daily whole egg (nice having your own eggs for this). And I use 1 1/2 cup oil. Also, if using for sandwiches and such I will add a literal pinch of raw sugar...it just balances out nicely for bread. As for blending, I go ahead and add the oil on top, let sit for a minute and the oil will stay on top. Then when you blend you put the stick all the way on the bottom and get the eggs mixed and then you will start seeing the mayo form and start bringing the stick up and down. Just saves the step of adding the oil while blending and comes out fine. Thanks for sharing, it's always fun to watch your videos.

Need to try making my own, we have fresh eggs so minimal things to purchase. We use Hellmann's and it's so pricey, and would be much healthier making my own. TFS, blessings

I watched this the other day and ordered the big container of almond oil (I don't like the olive oil either) and the dry mustard powder - came today and am mixing up the mayonnaise for my tricolor cole slaw - has to be better than the store bought which is full of bad fats. Trying it tomorrow morning and I bought online the glass salad dressings containers to put it in. I got a couple so I could make different dressings. It has a nice fitted top with lift up for use. And, all around it has recipes for different dressings if you want them. I had made it before with the almond oil and it tasted great. So, looking forward for even better with the big container of it. I use almond oil a lot for cooking because of the fire point which is very high and I use coconut oil. I only use olive oil now for cold foods (salads).

I have been making homemade mayo and it just didn't quite have something for my liking....I just made this and YEP! I love this! I think it is the combo of using 2 eggs and vinegar....my other recipe called for lemon and I never have fresh on hand so I had to use bottled....but this is SO YUMMY! THANKS!!

Hello Heidi! I love stuff that r simple to make! Seeing how I prefer non electronic appliances, would u think using a manual blender possible to make this, I’m not talking about the old time crank kinds (which I have and seam clumsy to use) I’m talking of the one that is newer, tub like, with the crank on top, I don’t know what it’s called, maybe u do, if u do, would it be a pain to make mayonnaise with it??? I gotta check out ur salmon sandwich spread now, it sounds delicious! Thank u

Instant potato flakes can be added to thicken if you mess things up or it gets a bit soggy with age then toss out if its that old, start a new batch.

I think I am going to have to try this. We do use a lot of mayonnaise for sandwiches but I have a picky one - it has to be a certain type. Maybe sneak it on him - lol.

@dancnluc mixing half/half with your regular one for start, changing to more of the new one gradualy helps with "picky ones". I did a simular trick reducing sugar and it worked untill grandma visited😅

While salmonella is real, I believe that just like botulism, it is not very common to get sick from it. Most of up grew up (and still do) eating cake batter and cookie dough without fear

Well I have an update to my mayo. I actually let it sit for 15 minutes I don't know why this works but it does I came back in I left my stick blender rest it thickened up beautifully I incorporate it all the oil again on my Pyrex dish it taste wonderful and I did 1⁄2 a teaspoon of powder garlic onion and cucumbers. That tastes wonderful. Thank you Heidi. 😇

I actually do not think a butter churn would work. It's the high-speed that actually causes the oil and the egg to emulsify together. I think you would just have a gloppy mess if you tried to do it in a butter churn. And, because I use avocado oil (which for me is expensive), I wouldn't want to take the chance of wasting two cups of avocado oil.

Dawn Miller I understand your feeling on that. (Avacado oil is too expensive for me. ) I just saw a vid from keto kitchen on is it worth it? A Kilner shake maker. It makes whipped cream in 1:30 using only your ability to shake a jar. The "mixing ball" inside does the job. I'm thinking it would be worth it for being able to use with no power to make mayo as well. I'm considering purchasing it for that purpose. Hope you have a bright day!

I make mine almost identical to yours, even using two whole eggs. Who has time to separate them, right?! One thing I add though that helps it to last much longer is about 1/8 cup or so of whey that's leftover from making yogurt. It makes it last easily a month in the fridge.

The vinegar does the same thing, mine has lasted up to at least two months or more in the fridge. The whey would also help to ferment it a bit so that is a good thing too :)

I use one cup of oil for each egg and salt and vinneger are preservatives....specialty the vinneger you fermented yourself..or fermented ingredients..

Hi heidi. I’ve been making mayo for years and have recently tried ketchup. I’m yet to find a recipe that my family don’t realize it’s homemade (like the mayo. They didn’t know for months after I started making it that it was homemade.). Anyways, still looking for the perfect ketchup recipe.

I add a tbsp of milk Kefir to make it last longer. You could use kombucha or water Kefir.

At one point in the video you called it salad dressing. My family prefers mayonnaise but not salad dressing. Is it the vinegar that would make it into salad dressing and can it be omitted without too much difference to the consistency? Thank you for all your videos. I learn a lot from them.

I think you are referring to me talking about using it to MAKE Ranch dressing or in potato salad. I never use mayonnaise on its own as a salad dressing

I make my mayo in a 500 ml jar (usually from coconut oil), usually use 2 parts bacon fat liquefied and avacado about 1 part and olive oil 1 part, of the amount in recipe. If I'm wanting entirely animal fat I whip an egg white and mix it in at the end to keep mayo spreadable.

How long does this take to mix into emulsion? I noticed that you stopped the camera during your mixing

Most store bought mayo actually uses WATER 🙄. I think homemade will last longer because of no water🤷‍♀️. It will separate sooner. I love immersion blenders. I was making homemade mayo in the 80s with a recipe from my Oster blender and it would breakdown after a few days. Immersion is sooo much better. Love your videos. Thanks and God Bless.

I have a love hate relationship with home made mayo. I have been making it for years and even did it by hand ONCE. LOL. The thing is sometimes it works so easy and other times..... I have go 3 times before it works.

You can, I just prefer to use my own homemade vinegar as it is both healthier and practically free, o yes, it also tastes better

Other oil (fat) options are bacon or hamburger grease (usually filtered for milder taste and appearance), butter (ghee for longevity and nutty taste).

Good morning! Isas just wondering if you use your own eggs or store bought? If you use your own d you pasteurize your eggs before using them raw? Do you worry about salmonella? Have a blessed day?

No, it cannot, it will ruin it if you do that. Best to make it fresh as needed

I do not think it would dehydrate well nor reconstitute well. As easy as it is to make with ingredients on hand, it would not really make sense to bother doing that anyway

Can some of the extra be frozen for later use? I don't use mayo much at all anymore and would love to just make my own, but wouldn't want to have it go to waste as the amount you made would be way too much for me.

I have never tried freezing it but would be concerned about it separating. As far as too much for you, first, this will last at least a month and I have had it last past two months in the fridge, but better yet, as you can see by the recipe, you can simply half it when you make it - one egg, one half cup oil (or a little more for a thicker consistency) and so on

I would not know as I have never tried it. Mary, over at Mary's Nest, has an interesting recipe where she uses three different oils. I am thinking of trying something similar but with my own oil blends.

That would really not make sense, all one needs to do is buy mustard powder and keep it on hand but even stocking up on mustard in jars, as long as they are left unopened, they will last for years in storage.

You can if you do not mind that flavor. My first batch I made with olive oil and I hated it even though I do really like olive oil for many other things
