Today I'm making an easy and delicious ensalada de nopal, cactus salad. This is perfect as a side dish, inside some tacos, or even just by itself with some chips 🥰
ENSALADA DE NOPALES INGREDIENTS:
► 1 lb nopales (cactus)
► 1/2 white onion
► Some cilantro
► 2 tomatoes
► 1/2 small white onion
► 1 serrano pepper
► 8oz queso panela
► Juice of 1 lime
► salt to taste

My former neighbor would make this, so delicious. Nopales are very good for diabetics. Put them in scrambled eggs and pico de gallo . have the salad for lunch,
