Airy, fluffy, and delicate Meyer Lemon Chiffon Cake with sweet glaze and lightly dusted with powder sugar. It's hard to eat only 1 slice!

Ingredients:
3 large eggs, separated
85 g (3 oz, or measure ½ cup and remove 1 Tbsp.) granulated sugar (25 g for yolks, 60 g for whites)
3 Tbsp. (40 ml) vegetable oil
2 Meyer lemons
75 g (2.6 oz., or ⅔ cup) cake flour (see Note for homemade cake flour recipe)
1 tsp. (3 g) baking powder
2 Tbsp. powder sugar for sprinkling on the cake
Meyer Lemon Icing Glaze (Optional)
60 g (½ cup) powder sugar
½ Meyer lemon (for ½ - 1 Tbsp. juice)
Equipment you will need:
17 cm (7”) chiffon cake pan (amzn.to/1r1VMch)

NOTE:
All-Purpose Flour vs. Cake Flour:
All-purpose flour and cake flour do not perform the same. Cake flour is more delicate, and if you use all-purpose flour instead of cake flour, the texture will be dense and tough. If you can't find cake flour, use this substitution:
Take one level cup of all-purpose flour, remove 2 Tbsp, and then add 2 Tbsp of corn starch back in. (1 cup AP flour - 2 Tbsp AP flour + 2 Tbsp corn starch = 1 cup cake flour). Be sure to sift the flour 3-4 times to distribute the corn starch well.

I love this!! I bought the pan you suggested and am so excited to try! So far I've made the matcha souffle pancakes, original souffle pancakes and the cheesecake that are in your website and your recipes have never failed ❤ *One note though, when you use the lemon hand juicer turn the lemon sliced open side toward the bottom of the juicer (essentially facing down) where the holes are. I felt so nervous for you when I saw this part because I used the squeeze lemons exactly like that before and the juice shot up and out and sprayed in my eye, it was bad 😭😭😣😣! Stay safe 😊 I appreciate you and your cooking gift!

Hello Nami! I love your videos! When I lived in Okinawa, I really enjoyed the Sakura season and liked to try the "Sakura" flavored items (like a Sakura Chiffon Cake). These items were mainly found in the tourist locations, so I don't think it was truly local, but I loved the idea of it. I think I remember the flavors being something like strawberry and vanilla or white chocolate? Do you have any ideas how to re-create this kind of a recipe? Thanks!

IN the recipe below sugar is 85 g (25g with egg yolks+60g in egg whites) but in the video 30 g in egg whites, I guess you meant put in 30g+30g two times? By the way , the music is beautiful.

Just tried your recipe. It is simple and yield good results. Just thay my cake did not rise as high as yours. I think I have probably deflated the meringue by overfolding a little. Otherwise, it is super soft and yummy. I waited for 10mins for the cake to cool upside down before flipping but it is still too soft. Almost broke it. What is a good time to cool? 15mins? Thanks.

I do not have the mixer used for the egg whites. I do have a hand held with a whisk attachment; do you think this will work? This is a really good video, thanks for sharing.

Most cakes made with meringue are the best when eaten the next day. You have to allow the flavour of the lemon to develop overnight since there are a lot of eggs in it.

hi Nami, would you help me? please do reply my message. since i'm so helpless 😭 so i baked this recipe with 20cm pan, it rised perfectly..but when i cooled it upside down, it shrinked on the edge. left only 1 side that stick into the pan. i used your 20cm measurement chiffon cake. what did i do wrong? please help me. thank you so much!

I cant seem to get any Meyer lemons, so i was planning on useing 1/2 lemon 1/2 orange to get the sweetness that the meyer lemon has do you think this would work?

I think so! Some people tried this recipe with only lemon and they told me they liked it. But I like how you mix with orange. I can almost taste it! :) Hope you enjoy the recipe!

I recommend using cake flour - you can make it with all purpose flour and corn starch. Directions are mentioned in the recipe Note section on my blog. :)
