How to Make Mochi the Traditional Way (Mochitsuki)

Look into how to make mochi by pounding it at a traditional mochitsuki. Mochitsuki usually takes place around the end of December or early January to celebrate the new year, but the practice has been lost, even in Japan, due to technological innovations that make making mochi easier. However, making mochi this way gives it a texture no machine could ever recreate. This video is an effort to make sure this tradition never dies.

My daughter sent me an Instagram post on how to make mochi because I used to buy traditional mochi for her when she was young. The "recipe" included ice cream bars and rice flour. I sent her this video.

"Creamy" is definitely the wrong word to describe Mochi. Instead, I would've used the word "Fluffy". Mochi doesn't melt in your mouth, but it feels like the softest marshmallow in existence.

I don't think so. Mochi is more sturdy and sticky, like the texture of gum which gives it that 'pulling' ability.

My daughter has made mochi this way at a , now closed, Japanese school in Atlanta and at a kindergarten in Osaka. It is fun watching a kindergarten teacher supervising a bunch 5 year olds pounding rice. LOL. Adults do most of the pounding the kids get a few turns each. This is a very nice educational video.

I learned this when I lived in Japan. In elementary school we took a field trip to a Japanese school, it was amazing learning their culture and seeing how different it was than ours. We each had a Japanese student as a partner, and we got to make our own mochi! It was so cool and delicious!

i love how versatile mochi is. we call it Tteok in Korean but regardless what you call it, its delicious! My favorite is always the rice cake dipped in a mix soy sauce, sugar, vinegar, gochujjang, and sesame seeds and rolled in seaweed!

You could buy the rice (mochi gome) at any asian supermarket in your town/city. Yet another reason I desperately miss living in the DC area... Lots of different & easily available ethnic grocers that carry practically any ingredient a person needs to create authentic foods that aren't native to the US... :) fyi: I moved to the backside of nowhere after things got serious w/my husband of 28+yrs. His business wasn't easily relocated & I was able to work from anywhere. Plus, he doesn't like the large metropolitan cities b/c he says they're overcrowded; I love it for the diversity in shopping, dining, & more accessible art type venues.

Thanks for the video. Is there a difference in steaming the rice verse cooking it? What is the purpose of having the rice hot when pounding? How long do you pound the rice? What is the texture or signs you are looking for?

The way the rice is cooked in this video is the most traditional way by steaming it. The more modern way of cooking rice is in a rice cooker which boils then steams it. It shouldn't make that much of a difference, but the way to tell if the rice is ready is if you take some grains out of pot and could smash it with your hands, it's ready. Kneeding and pounding the rice time depends on how efficient the pounder is (20-40min). The texture your looking for is smooth and creamy with no stray grains of rice and very sticky consistency. Also, it is EXTREMELY important to do all this while the rice is hot because once the rice gets cold, it will be impossible to both pound and form into small pieces. I hope this helps. -K. Lo

Using a hammer makes the mochi much softer and stretchy than doing so by hand. It also takes way faster to make it than by hand.

Not necessary a "press" machine, there are machines that can cook the rice and make mochi out of it. Most of this is the mochi that people will find in stores today. However, the process in the video is only done as to keeping to a Japanese new year's tradition.
