Garry Perkins well, no, saffron is not so necessary if you don’t have it you can use some other things that give the colour but the more important things are vegetables meat and rice but yes these is only rice with things it does not have almost any similarity with tradicional paella

Ok, I'm from Valencia and I will love to tell you something. If you want to call that right there paella valenciana, then learn how it's made, so as you said in the video, technically that's "rice with things", so please, title the video as "How-To: Make Rice With Things With Jamie Bissonnette", because we have our traditions and we don't want people to change the meaning and the essens of it. For what it's worth I worked in Calasparra for three years and had paella, rabbit with rice, chicken with rice, vegetable and snails with rice etc etc many many times, but they were always cooked on an open fire with almond or olive wood and the smoke seems to make a real difference to the flavour. Now I live in Cadiz and they add fino sherry!

The biggest difference between US and European versions (incredibly, the best I ever had was a small cafe in Funchal on Madeira) is the amount of rice. Paella is - above all - a rice dish. Too many versions have so much meat, fish, veggies that the rice is simply an after thought. Also, a good paella requires some socarrat -the crust of the pan. I bought a grill depending on its ability to fit my huge paella fan!

I think it’s more because using other rice would lead to an undesirable texture. Using other ingredients however, doesn’t, it’s two different comparisons.

lol69_ the main ingredient in paella it’s rice, it’s very important and there are like 3 or 4 types of rice that there are normally used by cookers in the Comunidad Valenciana. If you are constantly adding non-sense ingredients and really camuflaging rice you are not even making rice with things.

Well, that video was exciting! I'm sure your paellas taste great. BUT the Spanish are going to say that yours is not authentic. I used to think the original "Paella Valenciana" had all the seafood, but apparently no. I went to Valencia and they say the original paella was with chicken, rice and beans. I listened to a Spanish video-in Spanish-about this, and the cook added chicken, onions tomatoes, and 2 types of Spanish beans, one of them being the type where you eat the pod itself. People in Valencia said that paella used to be cooked using HARE or rabbit. The other types of paella, with seafood, or black rice (tinted with octopus ink), came later.

It seems pretty good, although having the Spanish-sounding music in the background was not a great idea given how much it differed from the original. I make the traditional Spanish paella and this has several similarities and differences. Similarities: - Smoke paprika - Proper paella rice - Soccarat (fried starch at bottom of pan) - Temperature maintained to avoid boiling - Does not stir to keep starch in rice Differences: - Vegetables not typically included added to recipe - Greater variety of proteins (seafood, chicken and chorizo) - No saffron - Use of tomato paste - Did not brown vegetables and chicken to get flavour from maillard reaction It's quite different but generally respects the ideas behind the tradition. I think it's a pretty good blend of his own tastes and the original recipe. Totally different but why follow tradition if you don't want to?

No complaints here. This was an excellent video in my opinion! I looked at a lot of recipes because this will be my first time cooking this recipe, and I'm definitely going with this one. Just one question though. I notice all the recipes I've seen so far use Saffron, but yours didn't, and they say it's a key flavor ingredient. Any reason you didn't use this?

I'm from Valencia and I've never seen a paella like that. He has never eaten a paella cooked in Valencia region. Maybe we can called that kind of "stew" Rice with lots of things boiled.

I'll follow your lead and make a wildly inaccurate comparison. You go to a good restaurant and order their pizza. Then, you proceed to complain that they don't make it the same way you always had it as a kid and insist that they change the recipe. Are you really going to be surprised if the chef tells you to take it or leave it?

Birch Weber wow, the point was if you ask for something, and it's not that... it's NOT what you asked for. How is that hard to get? It's not about how he cooks - it's about the ingredients. You don't make spaghetti and call it pizza, you have a different name for each dish. P.S. it looks good, but it's not Valenciana. His twist makes it a unrecognizable dish, that doesn't follow it's traditions.

Except he never called it traditional and went to lengths to say it wasn't. I don't even think he ever called it a Valencia pallela, so i don't know why the video producers titled it this way. Actually he called it a "munchies pallela." He pulled flavors and inspiration from the original recipe, so pallela is the best thing to call it as long as he also explicitly states that it isn't traditional. A chicago style pizza is still pizza and was pizza even the first time it was made because of the chef's intent.

Looks awesome. I've barely made my own paella before, but I love to eat it. But I have to ask, what does the chicken add to this dish? There is so much meat in here, if you include the seafood, it seems a bit over the top.

I was born in Valencia and I have eaten a lot of paellas... the only similar point is that "payeya" has rice as "paella". Maybe tastes good, but if you want to cook rice with chorizo never call it Valencian paella. You can said "American chorizo paella or rice with things".
