Tried this today without the zucchini and it turned out AMAZING! It took about an hour to cook the rice though but it turned out really good. Thanks for the awesome recipe!

this recipe is awesome. tried it today and it is absolutely delicious. also, i made about twice as much of the vegetable puree but i think it should keep quite well in a jar (or even in the freezer) for the next - even lazier - risotto. :)

I found what I am making tonight for Father's day. I may blend half the veg and keep the other half whole and mix it through!! My dad LOVES risotto but doesn't eat it often because of tbe amount of butter and cheese (he had a heart attack years ago.) This would be perfect and trick my 1yo into trying new veggiea

Great recipe - I have a friend staying for 2 weeks who is lactose intolerant so this is a great idea for a mid week after work meal (although I'll prob add some grilled chicken on the side too) ;-)

You got the butter covered with oil, but you could also substitute the parmesan that's usually used in risotto with nutritional yeast, which will bump up the dish with that extra bit of umami!

I was talking to my friend about how Ratatouille can be used for everything and risotto and ratatouille are my fav comfort foods. My friend is lactose intolerant too so this is FANTASTIC. Thank you so much for this recipe!

I like these kind of recipes, because if you feel like it, you could really easily just add butter and a ton of parmesan for ultimate goodness.

Well guys, I did it. I made this dish earlier and it was quite the learning adventure. Since I don't usually cook (and could only afford 1 big leek that didn't look like the one in the video) I had to use the internet a few times. And I guess the heat was too high or maybe I was supposed to stir it, I burned my jammy leeks a little, but I was in too far to give up.. just had to stop to pick out all the black bits.. and it was cold by then but I got it back on track. Everything else went fairly smoothly. Substituted a zucchini in for the eggplant, and used long grain rice as well :) It turned out really good (and pretty) :D Thank you for this!

This looks delish! I am so making this, but I'm making my risotto in the pressure cooker saves so much time and it comes out just the same as if you were stirring for 30 minutes but its done in 6 minutes!!

So I just made this and I really like it. Very quick and easy to make, its soooo creamy and tastes just like ratatouille. I just had to add a little Parmesan that was missing 👀oh and 1-2 more gloves of garlic

If you put some natron into the water while cooking the asparagus (or green beans for that matter) you keep the bright green colour.

funny thing is, butter has fewer calories compared to rapeseed oil. The only upside of oil is there's no cholesterol.

Luisa B Rapeseed (canola) actually has a slightly higher content of unsaturated fats compared to olive oil, so its actually (slightly) healthier! chartsbin.com/view/1961

Debbie Dann you can still add a small pinch of salt. (As there is maybe 2 teaspoons in the entire recipe) I have been lightly salting my son's food since he was 6months as he eats whatever I do. And now at a year eats everything. for the sugar, you could use honey. Honey is safe for a child under a year if it is cooked

It always annoys me that when you guys cook with asparagus you cut off the end with a knife. I was always taught that you shouldn't cut it, but instead bend it until it breaks naturally to get all of the end off that you don't want to eat

my guess is that they got a lot of flack for "wasting food" because they usually break beyond the point that you'd cut them but like................ it's not wasting food if you can't friggin eat it lol

Most of the time, you can do one the way you said, and if the asparagus are from the same batch you can cut them on the same point. They explained it once, or Donal Skehan did. But it's quite a time-saving trick!

If you want, you can peel off the ends of them and cook those as well, as it's the outside that is hard and inedible. Less waste, but more work.

If the asparagus had the bottoms cut off earlier they could have gone into the stock. Ah well... flavour wasted. :( I love the herb container. Ben, would you please consider showing how you grow your herbs, the containers and all that goes into them? I can't do a lot these days (can't breathe very well) but would like to have a small herb "something" in the window in my kitchen. I just don't know how. Thanks for considering it.

Do you get pre-cleaned leeks in the UK? Or are they grown in different conditions? Here in the US we're told to soak and swish sliced leeks in water to get the sand between the layers out.

Everything is mostly pre-washed and vacuum-packed here. I always rinse fruit and vegetables with tap water but they're pretty clean..I've never noticed any sand between the layers.

I tried this recently with a friend and it was delicious, but we both agreed a little butter and cheese wouldn't hurt the non-vegans among us. Making it again tonight and topping it with some fried chilli prawns ;)
