200g komatsuna (Japanese mustard)
1/2 teaspoon Japanese hot pepper
1/2 teaspoon salt
1 tablespoon soft brown sugar
1 tablespoon soy sauce
1 tablespoon vinegar
1 tablespoon mirin (sweet cooking sake)
Dashi kombu(*)
1 clove garlic(*)
*Let the komatsuna and seasonings blend well before adding later.
