Often served with sushi, Pickled Sushi Ginger (or Gari), is perfect for cleansing the palate and enhancing the flavors of your meal. This recipe teaches you how to make sushi ginger at home.

INGREDIENTS
8 oz (227 g) young ginger (you can increase up to 12 oz/340 g for this recipe)
2 tsp kosher/sea salt (I use Diamond Crystal; use half for table salt) (for sprinkling; 3-5% of the weight of ginger)
* Sweet Vinegar (Amazu)
1 cup (240 ml) rice vinegar
½ - ¾ cup (100-150 g) sugar (I used organic cane sugar, but if you use white granulated sugar, the pickle solution will be clear and can showcase the pink color better; DO NOT USE LESS SUGAR. ½ cup is the least you can go, and it is still quite tangy. If you use less sugar, it will not preserve well for a long time. If you are used to store-bought sushi ginger, go with ¾ cup or 150 g.)

I will make this tomorrow after buying fresh young ginger. Thank you for the recipe and thank you for the 4 soy sauce pickle recipe, it was so delicious. Overnight, even 4-6 hours is good. You can keep it for a year, if you use a clean utensil to pick up the ginger and keep in the fridge. Hope you enjoy the recipe!

Can anything be done with the liquid you squeezed from the ginger? Does it have a pronounced ginger taste? I can imaging adding a bit to some lemonade or in eggs for a little punch if the blanching doesn't neutralize it too much.

Hi Anna! I'm not sure where you live, but I wanted to mention that these days Etsy, farmers markets, and many online places sell young ginger besides Japanese/Asian grocery stores. Just in case you may run into one at farmers market, etc... 🤗

Hello! No, you can't. Because it's actually diluted from the ginger's moisture. Yes, definitely repurpose it for dressing or sauce. I get mine at Nijiya Market. It can be found Good Eggs (online), farmers market, some Asian markets...

You can, but please know that 1) you're adding molasses flavor, 2) the color will be more brown color. I used organic cane sugar, which is already slightly golden color. If I use white granulated sugar, pink color should stand out more... Other than that, you "can" use it.

Highly recommend young ginger, which tastes mild and tender. Regular ginger is spicy! So you really have to like ginger taste to eat pickled ginger made with regular ginger...

If you make homemade, yes, it's natural. It's from the pink parts of the young ginger. Store-bought ones are usually artificial color.

Great video. But wish your recipes are more condensed. With pictures and details already on the video is redundant and waste paper to print and keep on file. Not easy to compile a 'Just one cookbook' binder!

@@justonecookbook I meant, the recipe would be more collectible if on one page. Since your video already demonstrated what to do, you don’t need to include pictures, so many steps, etc. If you look at other RU-vidrs, their recipes are succinct, in PDF format and no more than 2 pages, preferably on 1 page. But love your recipes!

Whoever edited this video has no idea how to use their brain. The white text on the bottom left is sometimes difficult to read and disappears too quickly. Not ideal when you're cooking and watching the video at the same time. Also. It doesn't say on the video how long to refrigerate.
