Creamy potato, leek and carrot soup

Ingredients:
- 2 tablespoons olive oil
- 3 leeks, diced
- 4 carrots, peeled and diced
- 2 large potatoes, peeled and diced
- Salt and pepper to taste
- 1 teaspoon turmeric powder
- 1 teaspoon chili powder
- 1 teaspoon dried oregano
- 1 teaspoon dried garlic
- 6 cups vegetable broth
Instructions:
1. In a large pot pour some olive oil and stir in the diced carrots, leeks, and potatoes.
2. Cook for about 5 minutes and season with salt and pepper to taste, turmeric powder, chili powder, dried oregano, dried garlic powder, and mix until combined.
3. Pour in the vegetable broth and mix until combined.
4. Let it cook for about 60 minutes until the vegetables are soft and blend until smooth.
5. Serve and enjoy.
