Pumpkin puree is a key ingredient for fall favorites like pumpkin pie and pumpkin pancakes. We'll show you how to cut them, roast them, and process them, all in preparation for freezing the puree in freezer-safe containers.
Steps for Making Pumpkin Puree
1. Set your oven to 350 degrees F. Line a baking sheet with aluminum foil and one piece of parchment paper.
2. Cut the top off the pumpkin. Turn it on its side, cut end down. Cut in half.
3. Scrape out the seeds. You do not need to remove all the stringy parts. Just the seeds.
4. Oil the pumpkin halves with oil or some kind of fat. Place the pumpkin halves, cut side down, on the parchment paper.
6. Roast the pumpkin halves in the oven at 350 degrees F for 1.5 hours.
7. Remove the pumpkin halves and cover with a piece of parchment paper. All the pumpkins to cool before you handle them.
8. Scrape the soft insides of the pumpkin into a food processor.
9. Blend the pumpkin until smooth.
10. Spoon the pumpkin into freezer-safe containers. Use within 12 months.

I prefer savoury to sweet, but that looks great. Pumpkins are not common in UK supermarkets though, maybe I'll have to grow my own. 😊

We don't think so, but we use pie pumpkins.

Any suggestions on canning this? I’ve always got a lack of freezer space.

That is not recommended: nchfp.uga.edu/tips/fall/pumpkins.html What I'd do is to portion these up in vacuum sealer bags. Gently seal and flatten for easier storage. Here is a recipe for cubed pumpkin that is pressure canned. This I have done. The canning process will cook them really sof so one can mash them in a cheese cloth to remove excess liquid. nchfp.uga.edu/how/can_04/pumpkin_winter_squash.html
