For anyone that's wondering, the measurments of the ingredients are: 620g bread flour 300g cake flour 70g toasted rye flour 1 tablespoon of salt 1,5 teaspoon(s) of baking soda 430ml water I did my take on this recipie, but cut the ingredients to about a third. That gave me 3 large/160g (or 6 small/80g) servings of noodles. So his recipie would make 9 large or 18 small servings (roughly). I tried drying the noodles for storage and it worked very well.

unsmartnerd a minute or less when fresh, 3-4 minutes when dried.

I just made these noodles from Ivan's book. First time making noodles, never really done much of anything culinary, but love ramen and thought it looked like fun. It was so nice to do something new and make these from scratch. They turned out great. I'm going to complete the entire Shio ramen recipe from Ivan's book and then move on to making the other three types of ramen. Thanks Ivan!

I have the same argument with my ex-girlfriend that Ivan just talked about. I am Chinese and noodle is always the star of the dish and every other ingredient in your bowl is the supporting character, complex, distinct, but subtle. She is Japanese and she thinks the broth is the key. My problem with that is the soup just takes over the bowl of raman and you can't let the other components shine. This is why we broke up.

there is no real star. The noodles by themselves could be with anything, but could also taste like crap. the broth is just a soup by itself. The ramen is the combination of these elements. the star is the taste of it combined with the noodles and the broth along with the toppings. But if i had to pick, the noodles are in a way pretty important, but the soup flavors it really well ... so really the star is just the experience, because screw this. Itd be funny if yall broke up over ramen.

Used this recipe, OH MY GOD, I am never going to another ramen restaurant!!! I used my Kitchenaid mixer with pasta attachment. I made 10 big servings within an hour!!! THEY TASTED SO GOOD!!! The freaking texture is remarkable!!!

Having made the trip down to eat at Ivan's slurp shop, he gets ramen noodles. His noodles are super chewy and awesome. My kids were like "wow that's super chewy noodles". His cooks prepared it perfectly and didn't over cook it.

Man is a genius of Ramen, if you have ever been to his shop.. his noodles are perfection, never tasted any better.. and I have tasted A LOT of ramen in japan.

For me the noodles is the best part of ramen. Without it, it is just soup. LOVE RAMEN!!!!! I wish I can try his😩🍜

Do you match the thickness and texture of your noodles with the soup and toppings? If so, how do you match them?

Typically straight thin noodles go great with tonkotsu/shio broth.. Crinkled noodles pair well miso/shoyu... Then again I like them all any which way 🍜 :)

Yes, you do, but you also have to think about what's in the noodle. An Udon noodle is very different from a Soba Noodle in taste and texture. You'll notice that one broth might be great paired with one noodle, but absolutely tasteless with another noodle. You just have to try different things and see what works. Soups and ingredients vary from region to region, there is no right or wrong way to pair ingredients with your noodles. Use what you like, what's available and what's seasonal. Have some fun with it and try new things. If you want to learn about a whole bunch of ways to cook different kinds of noodles, read "Takahashi's Noodles," by Takahashi Yagihashi. This book was very helpful to me. Ivan Orkin's book "Ivan Ramen," is very good at explaining every step to how he makes his Ramen. I just want to point out that it is also an autobiography and it might make you cry. Also, don't be discouraged if you can't find every ingredient. There are ways to get stuff through the internet, Asian stores have most of what you need and you can plant stuff in your garden that you can't source here. Or, you could say F this, I'm doing it my way, which is what Ivan Orkin did and it made him famous.

Is normal baking soda sufficient or do I need to bake it for some time to get monocarbonate?

Use sodium carbonate for a more springy/elastic texture. Bake your sodium bicarbonate (baking soda) for 1 hour at 350 degrees and it should give you sodium carbonate. Cheers!

I was wondering about the same, alkaline is a lot more stronger than normal baking soda. But using his exact recipe with just baking soda, my ramen turned out as good as most ramen shops that I tried in Tokyo.

According to Sun Noodle, they "partnered up" with Ivan Ramen in New York: ru-vid.com/video/%D0%B2%D0%B8%D0%B4%D0%B5%D0%BE-_Wzbs021qX4.html I don't know if this means that they supply the noodles, or only the technical expertise. But I get the impression that Sun Noodle actually supplies the noodles, so I doubt you're really eating Ivan's own handmade noodles at his restaurant. With his sales volumes, that little handcranked machine wouldn't keep up anyway. Maybe the demonstration was just showing his early experimental method. Anyway, the Sun Noodle owner definitely mentions using kansui, which is the alkaline solution. Plain sodium bicarbonate (baking soda) wouldn't be a strong enough alkaline, unless you pre-bake it to produce sodium carbonate.

Sun Noodle supplies the noodles, but it's Ivan's recipe. In this video: ru-vid.com/video/%D0%B2%D0%B8%D0%B4%D0%B5%D0%BE-r9l7ByKSNJ0.html you can see him going into the Sun Noodle factory to check out his noodles, and that the second set of noodles (the thinner ones that aren't wavy) have the exact same color, texture, etc as the noodles here. But I wouldn't doubt that they use kansui, and Ivan is just showing you how you can achieve decent noodles at home with baking soda, but who knows---they might actually use it for his noodles.

Water should be boiling but don't boil it too much unless you like soft noodles, I'm also pretty sure while he cooked the noodles in water, he stirred the noodles frequently with chopsticks. So I guess try that? If you did then Idk I've never made Ramen

So replacing the kansui with baking soda provides an adequate alkaline base to create that springiness associated with Chinese noodles? Interesting. I was wondering why Ivan Ramen's noodles weren't more yellow, and the lack of kansui would explain that. His ingredient and noodle-making choices are closer to what I associate with soba, rather than ramen noodles. I'll have to give this recipe a try!

I would have thought so, too, but I've been to Ivan Ramen (LES location), and the noodles had that distinct al-dente snap of a good ramen noodle. It looks like the baking soda does the job for the "bite and chew".

+Tipper1941 I thought almost all ramen shops in America go to Sun noodle and the shop just provides recipe. Eater has a video about it and Ivan is in that episode i think..

+chuenwinglam well I'm not too sure about America, but I know many ramen-ya's in Japan own their own ramen making machine. It comes down what kind of noodles the chef is looking for! I know Ivan made his own ramen in house back in Tokyo.

Since the pasta maker is only the tool for the shape of noodles, it doesn't really matter, as long as the noodles come out thin for the texture of the noodles after they're cooked. As long as you want the noodles in the same shape, the way the maker does, you can make any Pasta, Ramen etc with it.

Recognize Real I have a ramen restaurant and the equipment to make your own noodle on daily basis doesn’t look like that.. Its a big operations making noodles for 300-400 guests per day. this was obviously just for the segment.

Why? In most English speaking countries we don't have noodle makers. Pasta maker does a pretty decent job.

You can do noodles by hand. Look up soba or udon makers. Ramen is typically made with very little water which makes hand kneading from unfeasible to impossible.

I thought it was a bit pretentious for this guy to diss a whole country's way of making noodles. His noodles looked sandy to me. Like a cornbread version of ramen. Everyone has their preferences, which I can respect, but who is that guy to say who the star of Japanese ramen soup should be?

That white guy is considered among the ramen gods over there. He's arguably top 2 living ramen cooks. Watch the newest season of Chef's Table. He lived in japan for 20 years and both of his wives were japanese. He improved upon something that needed an improvement and now thousands of japanese ramen shops have improved their quality as consequence. Out of over 80,000 ramen shops in japan this guys was consistently rated #1 the whole time he lived there.

He could be the best that ever lived and I'd still stand by my comment. A little humility goes a long way. Dissing an entire culture seems to be a think you guys are okay with.

Ramen noodles are ramen noodles because they are the SAME EVERYWHERE... when they are changed the are not ramen noodles anymore ... period
