How to make SHIO-JAKE (Salted Salmon) 〜塩鮭〜 | easy Japanese home cooking recipe

In my Channel, I show step by step of alternative but authentic Japanese home cooking, which can be made with the ingredients available outside of Japan.
In this video, I am cooking Salted Salmon, which is a typical easy fish dish in Japanese breakfast, in Bento-box or as a filling for Onigiri. This matches rice perfectly. This recipe can of course be used for other fishes as well.
Ingredients for salted salmon
Salmon 1 piece (100 g/4 oz)
Salt 1 Tsp (5 g)
The amount of salt for salted salmon ist approx. 3-5 % in weight.

I made this a few weeks ago and it was so simple and delicious! Thanks to you, my new favorite way to cook salmon is on parchment in a fry pan. It comes out perfect every time and has so much more flavor. We are new to your channel and are slowly making our way through all of your videos. Gorden Ramsey wouls be proud!!! Ill have to take a look at other videos vut fo you discuss care abd usage of raw fish (for sashimi or otherwise) i have a fre great fish markets nesr me but im so afraid i woll handle it wrong or let it sit too long and get sick or something :o

I have just got a couple of salmon fillets (small ones perfect for my husband and myself). I was going to ask why you use parchment paper but scrolling down revealed the answer...so, on that basis, what if you use a non-stick pan? Would you still need parchment?

if you have non-stick pan, then you don't necessarily use parchment paper. I am doing this method just to show this alternative variation for those who do not have such pans.

Love your vids. Weird comment about the fat though. Fat is an essential macronutrient, and salmon (which is by no means a lean fish) is a great source of healthy fats.

What is that paper you use in the pan, parchment paper?

yes, it is a parchment paper (I am used to calling it as cooking sheet or cooking paper) I am using it in order to avoid ingredients from sticking and burning. but if you have a non-stick frying pan, then you don't need it.

That isn’t necessarily true, from my experience, when the scaling and running it under the cold water… I did it just yesterday and all I got was not only scales flying everywhere… But water spraying with it, L O L 😂. Perhaps I need to work on my technique when doing this? 😂

Why do japanese use the parchment paper in the pan?

I/we use the parchment paper often in order to avoid ingredients from sticking and burning, since I am using in this video regular frying pan and not a non-stick pan.

Don't put oil under paper. Than paper will not burn like on video ;)

i am using the parchment paper to prevent the fish to stick on the pan, since I am using a regular pan (not a non-stick pan) and also to prevent it from burning. but if you have a non-tick pan, then you don't need the paper.
