The guidelines for this cook:
1.) Ran the pit temperature at 225 until the first checkpoint roughly 2 hours into this cook just to try and get more smoke flavor into the brisket on the front end of this cook.
2.) CHECKPOINT 1 - Check the progress of the cook to see if the brisket is cooking too fast. Too fast is indicated by "burning" on the edges. Adjust accordingly.
3.) Ran the pit temperature at 250 from the 2 hour mark until 5.5 hour mark for our 2nd checkpoint.
4.) CHECKPOINT 2 - Check the color of the brisket to see if it is where we want it to be and also check for pooling of juices n the brisket, dryness of the brisket and to see if the bark has set yet. Adjust temperatures as needed and moisturize where needed. Wrap the brisket if the color is right and run the pit temperature up to 275.
5.) Once you have the brisket wrapped it's best to check the tenderness of the brisket once an hour until the brisket hits the tenderness you are looking for.
6.) When the tenderness is achieved, pull the brisket off the pit to rest. Leave the brisket wrapped in the butcher paper and rest down to 150 degrees before slicing.
7.) Once 150 internal temperature is reached, slice and enjoy...

1 - Rub: 1x salt for 4x paper portions + mustard 2 - Grass down, meat up 3 - 2h for 225f 4 - More 2h for 250f 5 - after 4h - use water spray, or vinegar with apple. Spray all over the meat, no need over grass. 6 - After around 5h. Get the brisket, cover with paper. Now grass up and meat down. Put it back to the smoker. 7 - With butcher paper, raise to 275f. Leaver for around 2 - 2:30h 8 - Check inside temperature with thermostat. It should also fell as a knife in a butter. If is not soft enough inside, leaver for another 1h 9 - If ready, get the meat, remove paper. Wait temperature to get around 150 to star cutting. See video around 18-18:30 to check how to cut.

Man the color on that brisket is amazing. 😮 I love seeing people who are experts at something doing what they do. Only way rest of us learning can really improve.

Alton clearly knows what he is talking about and presents his information and techniques in very friendly and understandable way. One of the best presenters on RU-vid.

Dawg you hit a homerun with this one. There are a lot of people out there that are intimidated by cooking a brisket and you just showed them how to do it step by step. Great job brother!!!

Bro. Thanks a lot. The explanation makes more sense that when people just show you what they do and say do it like this also. Thanks again!

I have never watched a cooking video that has literally made my mouth water. So good, my smoker arrives in a week and brisket is first on the menu. Thanks from Australia.

Dude is legit! Solid video and love how he takes some of the hype out of cooking an amazing brisket. Was there a special brisket you used? The packer cuts I have seen normally have a thinner flat - this one looked as thick as the point? Great video and thank you for taking the time to share your wisdom.

Again man, thank you so much. Used your tutorial for ribs, got me outstanding results, same for a brisket I just cooked for my family and my inlaws. Outstanding! You're the man, please keep it up. I can't wait to keep trying new things on my pellet smoker as I learn more and more how to do REAL BBQ. Cheers, man. Happy to be part of your dawg pound. Lol
