In this video, I'll show how to make a simple, but delicious, wheat sourdough bread for beginners with the inclusion of 20% whole wheat (or spelt) flour. Since the bread has whole wheat flour in it and will undergo a long cold fermentation, the sourdough starter should be young with high yeast activity but low acidity.
This bread would be suitable for both experienced bread makers as a base for making various creative variations, and for beginners as a first bread.

100 g water 30-36C
20 g whole wheat flour
80 g bread flour
Dough
100 g active starter
400 g bread flour (minimum 12% protein)
100 g whole wheat flour
12.5 g salt
Desired dough temperature 26-29C
