Sweet rice dumplings. My favorite is black sesame sweet rice dumplings. I will share a method to make rice dumpling wrappers that are easy and pliable.

[Ingredients]
(This recipe makes about 40 sweet rice dumplings)
Roasted Black Sesame Seeds 150g (1⅓ Cups)
Sugar 40g (¼ Cup)
Unsalted Butter 80g (⅓ Cup)
Honey 50g (¼ Cup)
Glutinous Rice Flour 400g (3 Cups)
Warm Water 300g (1¼ Cups)
How to make sweet rice dumplings:
1. Make the fillings: Add the roasted black sesame seeds and sugar to the blender and turn them into powder; Add the mixture to a bowl and add the melted unsalted butter and honey, combine well and freeze for 15 minutes until semi-solid; Divide the fillings into small doughs with spoons, each filling weighs about 7~8g, round and dough; freeze for 40 minutes until solid;
2. Make the wraps: add warm water to the glutinous rice flour and make a dough; remove an egg-sized dough from the main dough and cook the flattened small dough until semi-transparent; put the cooked dough in cold water until the temperature is workable and put it back to the main dough; cover with plastic wrap to keep the moisture, and rest for 20 minutes;
3. Wrap the rice dumplings: Divide the dough into 4 equal parts; make one of them a long dough and divide into smaller doughs, each being 15g; flatten the smaller dough and fill with black sesame fillings with a spoon; Wrap up the fillings and seal tight; add flour to the plate to prevent stickiness;
4. Cook the rice dumplings: Bring the water to a boil and make a swirl; put the dumplings in the water and turn to medium-heat immediately; cook 2 more minutes after floating; put the rice dumplings and soup in a bowl with a ladle;
5. Freeze for longer storage: The uncooked sweet rice dumplings can be frozen for storage; Don’t forget to line the tray with parchment paper to prevent stickiness.
