This looks like a solid pantry dinner. Easy enough to have the ingredients just around the house for other things and suddenly have some great pasta on lazy tuesday evening.

This was made tonight, used just enough pasta for the pasta water and spaghetti squash. This is an amazing dish that is super easy and tastes incredible!
Cream cheese used to be my college hack for a quick awesome pasta, i used make pasta with bell pepper and a cream cheese sauce. Sounds goofy but pasta is frankly too versatile for people to be so uptight about what you can add to it.
I buy them every month.... I make a wonderful condiment for any occasion. drain the jar, add thinly sliced garlic, zest of a full lemon, oregano, basil, red chili flakes. then top with an extra elegant olive oil. put on top of a pizza slice, on a charcuterie board, endless options. I have a jar 24 7
Sun dried/oven dried tomatoes poached in olive oil is such a nice way to preserve my garden harvest. No hate on the sun dried tomatoes. Wth is with people who over hype. 😑
I love sun-dried tomatoes, especially home made. This looks delicious! I'm plant-based and I'm going to try this with some vegan cream cheese, and definitely a little chili too. Thanks for the inspiration!
@@2628959 I prefer Violife. It's a little more neutral tasting but also has a very slightly plasticky texture. To me, its taste is closer to dairy cream cheese than others I've tried. But I've seen lots of different opinions. I think it's one of those times when you have to taste them yourself.

It's 34 degrees F here at 5pm. I'm going to make this tonight. I'm going to put fried jalapenos on top instead of the capers though. I like a little more heat.
My first thought was using ricotta instead of cream cheese here, but I bet it wouldn't get as smooth. Also I love that her pans aren't perfect. When I started using "real" pots and pans I thought I was doing it wrong because mine didn't stay as shiny as the ones on TV. Turns out pans in kitchens look like they've been used, and pans on TV look like they've been provided by the manufacturer and get polished by a staff...

I love sundried tomatoes I fry off chopped pancetta throw in sundried tomatoes garlic and basil add pasta then shave parm over the top. Dinner done in the time it takes the pasta to cook 😙🤌
