- 3 1/2 oz tenderloin
- 7 quail eggs
- 1 tsp dijon mustard
- 1/2 diced shallot
- 1 tbsp gherkins
- 1 tbsp capers
- 1 tbsp salt
- pepper to taste
- 1 tbsp olive oil
- foie gras truffle
- micro arugula
- butter
- bread

The quail eggs were just cooked enough for the whites to set - the yolks were still pretty raw as should be. Nothing wrong with that.

I love steak tartare! I make mine with round steak and I do use a food processor. I think it turns out fine. I don't use all those ingredients; just the steak, egg, onion, salt and pepper. I serve it on buttered Westphalian pumpernickel bread, topped with hollandaise sauce. Add a Caesar salad on the side, and you have a complete meal.

In poland we cut the meat until its reeeallyy smooth and serve it with pickles and shallots around the tartare.

Doesn't the dijon mustard, shallot, gherkins, capers, salt, black pepper, and olive oil form essentially a vinaigrette for the meat? And by placing this in the refrigerator to chill the meat marinates like fish, shrimp or seafood in a cerviche? Does that still make this a tartare? Curious about the difference.

I doubt it was the Germans. Most Germans (way back then) would not eat beef or any meat raw. Until quite recently, their cuisine is known for their roasted/stewed meat, potatoes and cabbage, all cooked til "done". Most likely, it was the French.

Fantastic dude 👍 If y'all don't want to eat the quail eggs completely as is but don't want to pan em, can always sousvide them. This allows pasteurization while keeping the white & yolk raw... So FYI... Than again your going to eat raw meat? If your gonna get sick your gonna get sick; gives you a reason to throat punch your brotha who made it.

WTAF! Egg yolks, raw! Chicken or duck egg yolk are great. The meat should be pure fillet, no fat, only highly intensely flavoured meat. Your local butcher will prepare and grind it for you. There are a few ingredients missing here, and the blending of the ingredients is off. If you really want truffle (and is a nice addition), at least use a few light shavings of pure truffle over the top! I can be honest here because I am a retired chef who worked under the like of Paul Bocuse, Anton Mossiman and the like.

@@sehrishkhan8338 Eggs are required to be pasteurized in the U.S, you should definitely know that raw eggs are a non-issue. The beef on the other hand is only frozen multiple times before even arriving at the store, but any government that is not in a shithole country has an organ that makes sure the food you buy doesn't make you sick.
