Well, I made this today. I was fairly nervous, my partner being Irish an' all, but it was an absolute triumph and she reckons it's the best she'd ever had. Really easy to make, so I'll definitely be doing it again. Thanks Donal.

why not finish cooking on the stove with the lid on or off 2:57 and flame the food for crispy top?? why put the entire pot in the oven to waste so much fuel AND more chemicals to WASH the POT that has all the food burnt on to the edges and the sides. is this really ways to destroy more environment and water by polluting it with so much chemicals and use so much sponges and water to scrub it 3:32 all of and after awhile TOSS THE POT and waste more resources on planet to remake the pot to recycle the pot? every item make costs environment because during the make and recycle of item pollute the environment now and future? Who want to eat polluted food grown from ground full of chemicals and who wants to breathe air full of pollutes?? every action adds up. people eat everyday some people eat 3-5 times a day! there are 7.6billions people on the planet!! can't u, ur manager, related businesses find better way to do business that are SOCIALLY AND ENVIRONMENTLLY RESPONSIBLE and aware of every action done that pollute the planet and health of many person on it now and future??? fuel use is massive when u add up the stove top PLUS OVEN WITH SO MANY PEOPLE ON THE PLANET making foods 2 or 5 times a day! EVERYDAY

making every item costs environmental health. which means if people have to use more water and sponge and soap to scrub it off then people have to make more of those soap and container for soap and wasting clean water TIMES THAT BY ALL THE PEOPLE ON EARTH. plastic bottle of soap is an example of an ITEM that is COSTING ENVIRONMENTAL HEALTH THUS OUR HEALTH ON THE PLANET (make and recycle)

in California because of the environmental damages for many decades such as over use of chemicals like pesticides and chemical fertilizers and chopping plants to keep it neat for urban decorations; PLANTS AND TREES ARE FALLING OFF AND BREAKING OFF WITH JUST LIGHT BREEZE OF RECENT "STORM" OF RAIN AND WIND due to damages to plant cells from horrible polluted ground and environment!!! the health of the entire STATE is not good it was or is in drought for YEARS. don't use methods that might damage entire planet more than it already is damaged because the poor quality plant reflects the quality of the environment and we also live in it and eat food from the environment/land/ground/water evaporate into rain and falling back onto land. more soap? more items made? more items recycle? more fuel use? btw every item costs environmental resources and fuel. people eat those polluted foods/plants and for how many generations until today and what happens over time? this is horrible for human health on the planet

Correct me if I'm wrong but traditional Irish stew was never made with Rapeseed or even olive oil - in many rural places those oils were not imported till recently. Tallow, Lard or butter were used and they all taste million times better than any oil. I don't know why so many chefs nowdays use odourless oils instead of those natural beefy nutty fats that are bursting of flavour and aroma and will instantly infuse anything you cook in them - veggies or meats. Try it and see for yourself, you will not be disappointed. Moreover - you would make your grandma proud of you! ;-)

Your research is impressive but I live my life by the last blood test my doctor had me go through. After a year of avoiding butter and living solely on olive oil, I got my triglyceride levels down to a normal level. So with all due respect to your grandma (and mine) I'm going to stick to a minimalist diet.

Everyone in America thinks of corned beef and cabbage as the traditional St. Patrick's Day meal, but my mom always served lamb stew, much like you had. She often browned the lamb, then added it all into a crock pot for the rest of the day. The aroma was heavenly by dinnertime! This looks absolutely delicious! Happy St. Patrick's Day!

I make this but with 2 teaspoons of dry thyme, 2 tbsp of Worcestershire sauce and a couple of cloves of garlic, I also put dumplings in and just chop up the potatoes It’s utterly delicious and last time my sister ate so much she thought she was gonna be sick!

The reason you can't is quite simple we have 100s of different accents.His is a dublin 4 accent which is an upper middlecass originating from dublin 4 in dublin ,but someone who has that accent is not necessarily from there ,people from that particular class have that accent,not all of them ,but a good many. for example i am irish ,but they are some accents in ireland that even i can't understand

I had Irish stew when i was growing up and made it myself a few times! We had it plain! Potatoes,onions and lamb layered in a casserole and cooked till tender, no add ons! Just plain onions, potatoes and lamb, although we used lamb chops and a little rosemary for flavour, we would use a fork and squash down a few potatoes into the juice and the rest of the potatoes were kept whole! I am sure back in the day in Ireland it wouldn't have been as fancy! We did add cabbage on the side as a green vegetable! I have noticed all modern day chefs add this and that, not saying these interpretations aren't tasty just saying back in the day more simpler i would imagine!

I just had a wonderful lamb stew! And now that I eaten most of the potatoes and carrots and meat I'm going to take the rest of the meat that's left over and make a pot pie with peas and carrots a nice biscuit crust on top

Great recipe! U should try adding flour to the meat before searing them it will thicken the stew n it'll brown better when searing! Just my two cents!

Jaysus my mammys stew is a lot different than that! First of all we use beef and mince balls and we put the spuds in cut in half and allow them to cook with the meat and the veg all together. Also it's a stew so you're supposed to stew it not bake it in the oven?

Pretty sure you don't fry the meat, don't use celery and don't cook the potatoes like that in a traditional Irish stew... Yes, it's a variation on an Irish stew, but I think using the word "traditional" in the title is a bit misleading.

Like with any traditional recipe there's alway variations adapted over the years! This is traditionally what we make in my family home in Dublin every St. Patricks Day! :)

You could totally get away with that! Or do what I do and serve it with lots of bread to mop up the juices instead! :)

Did the potatoes come out really mushy? I mean, normally it'll take about 20-30 minutes to cook cubes of potato. But you sliced it thinner, so it'll probably cook even faster. So didn't it end up a bit mushy and breaking down really easily?

I amended the recipe by adding a little paprika, butter beans and tinned plum tomatoes, sprinkled a little thyme on the potatoes and it came out fabulous. Probably not a stew anymore and heading into goulash territory but who cares it was tasty!

First up - traditional Irish stew makers would not have lamb nor celery. No one would slaughter a lamb early when you could let it grow up. Mutton would always be the meat of choice. Celery was relatively unheard of in Ireland until the 1980s. I never ate it as a child. Donal was born in 1986. This is nowhere near a traditional stew. A traditional Irish stew would be mutton, potatoes and whatever else was lying around. That's it. To make out there was a recipe is a joke and an insult to Irish people.

I think u are over egging the Oirish Stew dere, son. Rapeseed oil? FFS. Celerey even. And by the way, given the way those carrots are sliced that thick, there's no way they'll be 'tender' after five minutes. Smell of my childhood me arse.

I have a question: can I follow the instructions up to the point just before the potatoes are put on top and instead of putting the potatoes on, allow the unfinished stew to cool, put into portions (I live alone) freeze the individual un-potatoed portions, the lamb would be only partially cooked at this stage, defrost when I want and THEN finish the individual portion with potatoes and butter, cook in oven and thoroughly enjoy? Would the lamb become tough due to twice cooking?
