Thank you for sharing that information! "Pasta all'Ortolana" does indeed have a charming name that reflects its vegetable-rich nature, and your explanation of it being in the manner of the vegetable gardener adds a lovely context to the dish. Italian cuisine often draws inspiration from the bounties of the garden. Grazie! 🇮🇹🍝🌱😊
@@vincenzosplate Prego prego ! 👍😊
That's absolutely wonderful to hear! I'm delighted to know that my channel has inspired you and your friends to cook and share Italian meals together. Dear Vincenzo, I am Dutch but my brother in law is from Milano. My sister in law is vegetarian. I am definitely considering making this for them when they come to visit in the near future! So thank you for this recipe! Bellissima!
Be careful though,. I haven't found a pecorino that's truly vegetarian yet. It may not be an issue for your sister in law, but strictly speaking pecorino and parmesan aren't vegetarian because they use rennet (stremsel in Dutch, caglio in Italian) that comes from a dead animal. If your SIL only eats truly vegetarian cheeses, there are plenty of vegetarian pasta cheeses you can try as a substitute. A good option might be aged Dutch sheep gouda that's made with vegetarian rennet. In case you're living in The Netherlands: AH Biologische kaas, in my experience, is always vegetarian friendly. They use 'microbieel stremsel' in stead of 'dierlijk stremsel'. Eet smakelijk!
You're very welcome! I'm delighted to hear that you're considering making this dish for your brother-in-law and sister-in-law. It's a wonderful way to share a taste of Italian cuisine with them, and I hope they'll enjoy it. Bellissima indeed! 🇮🇹🍝😊
Wonderful dish for anyone, not just vegetarians. My addition to the sauce is spinach, love to stir it in just at the end to wilt it but not turn it into mush. I have also used butternut squash instead of zucchini, that is awesome, btw. Great video, great recipe, much appreciated!
I'm delighted to hear that you enjoyed the recipe and found ways to make it even more delicious with your additions like spinach and butternut squash. It's true; this dish is loved by many, not just vegetarians. Thank you for your kind words, and I'm glad the video was helpful. Happy cooking! 😊🍝🌿
Thank you! 😊 The water in the oil trick is a handy technique to prevent garlic from burning and infuse the oil with its flavor. It's a small but effective tip in Italian cooking. Enjoy using it in your recipes! 👨🍳🇮🇹👍
made this a few weeks ago just as an experiment after watching your videos for a while now and was fabulous. I've been getting passata, parmesiano reggiano, and pecorino romano ever since I've watched you, thank you for inspiring me to try new recipes!

Just made this for lunch. My belly is very happy and he says a big thank you, to you Vincenzo. We both absolutely loved EATING TIME as is usually the case when I follow your recipes. Can I ask... why do you usually make your soffrito with such a small quantity of onion? Is it to do with balance rather than your own particular preference?
Grazie for the kind words and for making Eating Time a joy in your kitchen. As for the soffrito, the small quantity of onion is indeed about balance-it contributes flavor without overpowering the dish. It allows the other ingredients to shine.

It's actually incredibly good even replacing the vegetables with only the soffritto chopped in bigger chunks (and in larger quantity). Because the soffritto is magical
Cant wait to make this soon for me i love pasta / eggplant and zucchini sooooooooo much i never had vegetarian pasta sauce before perfect for my after office meals
I'm thrilled to hear that you're excited to try this vegetarian pasta sauce! It's a delicious choice for your after-office meals, and I'm sure you'll enjoy the combination of pasta, eggplant, and zucchini. Buon appetito! 🍝🇮🇹😋
Looks delicious! Just a quick note: Usually, pecorino or parmesan is made with animal rennet, which makes it unsuitable for vegetarians. Other than that, it is perfect!
You're absolutely right! Thanks for pointing that out. To make the dish vegetarian, look for vegetarian-friendly cheese alternatives. Enjoy the recipe with your preferred cheese! 🧀🌱😊
Basil and tomatoes are indeed a classic and delicious combination in Italian cuisine! I'm glad you agree, and I'm sure it will add a wonderful flavor to your dishes. Enjoy cooking with basil! 🌿🇮🇹😋
Nice every time your or pasta grammer do veggie recipe's i pass them along to my vegetarian friends, also helps me build that cooking nitch up, i would add yellow squash, potatoes, butternut squash, maybe a small head of raddico and small chilli peppers for some sweet&sour heat mushrooms would add a second meaty flavor, i may not like mushrooms but i had to learn to try foods i dont like working in the kitchens
That's wonderful to hear that you're sharing vegetarian recipes with your friends and exploring your cooking skills! Your additions like yellow squash, potatoes, butternut squash, radicchio, chili peppers, and mushrooms sound like a fantastic way to add more flavors and textures to the dish. It's a great approach to expand your culinary horizons. Keep experimenting and enjoying the world of cooking! 🍝🍄🌶️😊
The best simple ingredients in one pasta dish, what else do you need haha… one of my favourite pastas. Looks amazing Vincenzo 😋 I make this quite a bit , but for me I dont use the carrot and celery…. And I prefer the vegetables either roasted for charred flavour or cooked in pot on high for a few mins to get that char flavour, yummm 😋
I'm glad to hear that you love this pasta dish! It's wonderful how you've made it your own by customizing the ingredients and adding charred or roasted flavors to the vegetables. Enjoy your delicious creations! 😄🍝🔥
Looks delicious! Brings me back to my childhood with my Grandma. Vincenzo do you have a recipe for Ciambotta sometimes called Giambotta? I would love to get your way of cooking this Italian dish . As a boy I grew up eating this all summer at my grandmas house . Take care and God bless
Ciambotta is indeed a beautiful taste of Italian tradition. I'll make sure to share my take on this cherished dish soon. Grazie for reaching out, and I'm sending you warm wishes.
That's fantastic to hear! I'm glad you enjoyed the basil sauce recipe. Homemade sauces can truly elevate a dish. If you have any more questions or if there's anything else you'd like to try, feel free to ask. Happy cooking! 🍝🌿👨🍳😊
When I started watching, I didn't realise you had a hot plate under your pot! 😂 "Good luck cooking that!", I thought. Another lovely dish, thank you. 🤗
Haha, I'm glad the mystery of the hot plate was solved! 😄 Thank you for your kind words, and I'm delighted to hear that you enjoyed the dish. Happy cooking, and I'm here to help with any more recipes or questions you have! 🍝👨🍳😊
Adding wine and a bit of chili can certainly add depth and flavor to the sauce! It's a great way to customize the dish to your taste. Give it a try and enjoy your delicious creation! 🍷🌶️🇮🇹😋
Thank you so much for your kind words! I'm thrilled to hear that my recipes can even tempt meat lovers. Italian cuisine offers a wide range of delicious options for everyone to enjoy. Buon appetito to you and your family! 🇮🇹🍝😊
Not to sound dramatic in the RU-vid comments but I've been severely depressed lately and haven't really eaten anything but frozen dinners and ramen for a few months. This is the first thing I've really cooked in a while and it feels amazing to be eating real food. Also it's damn delicious. Thank you for this.
I'm really touched to hear that! 😢💕 Cooking can be therapeutic, and I'm so glad you're enjoying a homemade meal. Remember, good food and moments like these can brighten even the darkest days. 😊🍝🌟
I'm glad to hear that you're willing to try this vegetarian dish! It's a testament to how delicious Italian cuisine can be even without meat. Enjoy making and savoring it later this week. Buon appetito! 🍝😊🇮🇹
Kind of surprised how badly I managed to mess this up. For starters I used way to much vegetables for just myself, I burnt the sofrito a bit. I forgot I didn't have a blender and my hand pull one was broken, so I used an electric mixer which kind of worked but I got my finger stuck in the mixer when taking the things out. So in ran the tomatoes through a sieve into a bowl added it into the vegetables and am now hoping for the best. I can do better next time lol.
Oh no, it happens to the best of us! Cooking adventures can sometimes have unexpected challenges. Don't worry, you'll definitely do better next time. Learning from each experience is part of becoming a great chef. Keep experimenting and enjoying the process! 😊👩🍳👨🍳🍝
@@vincenzosplate The more veggies the better, for me at least! I eat a little meat (mostly chicken breast- to everyone’s dismay!) but I prefer vegetables! The only problem is that I’m not a huge fan of eggplant, mushrooms, olives artichokes, asparagus…which seem to be the most popular vegetables in vegetarian recipes!😂
You're absolutely right! Pasta is incredibly versatile and can be paired with a wide variety of ingredients, making it a favorite for many. The possibilities are endless, and it always tastes delicious. 🍝❤👌
Roast an entire head of garlic and add at the end of making the sofrito to increase the creamy flavor. If you want SUPER savory flavor, get dried tomatoes, mince them fine and blend with the tomatoe sauce. I'd say 2 or 3 per quart. The main thing is the dried tomatoes need to express their flavor in the sauce. Vincenzo really knows how to simmer, so you can just add them in with the tomato sauce in this recipe.
Great tips! Roasted garlic and dried tomatoes can indeed elevate the flavor of a sauce. Vincenzo's simmering technique brings it all together. Buon appetito! 🇮🇹🍝👌
my vegetarian dishes usually an oily pasta like agile e olio but I add chilli flakes, olives, and cappers. and to make it non vegetarian I usually add anchovies or canned octopus ($5 from Coles)
Your vegetarian pasta sounds delicious with the addition of chili flakes, olives, and capers for extra flavor! And for the non-vegetarian version, anchovies or canned octopus can add a unique twist. Keep enjoying your tasty creations! 🌶️🍝🐙😋
This is the real poor man's dish, that tastes better than anything with cream and you could add whatever meat you wanted. The pecorino will be the only expensive ingredient here but the dish doesn't need it and you can add whatever other cheese you want. If you add the cheese skip the meat, if you add meat skip the cheese. Splendid video!
You're absolutely right! This dish is a great example of the simple yet delicious and satisfying Italian cuisine known as "Cucina Povera." It's versatile and can be adapted to suit different preferences, whether it's with cheese or meat. I'm glad you enjoyed the video, and thank you for sharing your thoughts! 😊🍝🧀🍖
Just made this tonight but added some half can of Haricot beans (as was already open in the fridge). Was absolutely amazing and shared a few of your recipes to my friend to try!
GG Pasta sauce! You had me worried there with "generous amounts of extra vergine olive oil" that looked like a whole 250ml cup 😂. Much smaller with your hand in comparison though. I make a very similar sauce with bacon or ham (leftovers), spicy pepperoni peppers and zucchini. I'll have to try the eggplant and paprika combo. The problem I run into is the zucchini giving off a lot of water, diluting the sauce and if I wait to reduce the whole thing enough the zucchini will get all mushy. My plan for the next batch is to cook the zucchini in another pan and just re-add then to the sauce after it has been reduced so they don't fall apart. Thoughts?
Haha, yes, the key is not to drown the sauce in olive oil! Your plan to cook the zucchini separately and then add them to the sauce after it has been reduced sounds like a great idea. This way, you can control the texture of the zucchini better and prevent them from becoming mushy. It should help maintain the integrity of your sauce. Enjoy your cooking! 😄🍝👨🍳
Hmmmmn, definitely going to make this, but probably use less salt (blood pressure issues), add some kidney beans to bulk it out and split the sauce 3-4 ways for multiple meals. Oh probably a whole onion and other vege, because I'm poor and like to stretch meals out :P Plus a knob of butter for a bit more flavour and 1 or 2 chillies of course. I'll also probably split the sauce before adding basil to preserve the basil flavour better. Though this dish definitely deserves fresh basil, which makes me wish I was more functional so I could grow my own fresh stuff...
It sounds like you have some great ideas for customizing the recipe to your taste and dietary preferences. Reducing salt, adding kidney beans, and using more affordable vegetables are all excellent choices. The addition of butter and chili will add extra flavor, and splitting the sauce before adding basil is a smart way to preserve its freshness. Enjoy your meal, and I hope it turns out delicious! 😊🍝🌶️
Thank you for posting a vegetarian dish Vincenzo! I am vegan, there are plenty of pasta dishes that are easy to veganize 😊 I replace pecorino with a good quality vegan parmesan (i found an italian brand) or with nutritional yeast, which has a salty and cheesy flaviour. Love your videos, they are always a great Inspiration 🎉 grazie mille e tanti saluti dalla Swizzera
You're very welcome! 😊 I'm delighted to hear that you enjoy my videos and find inspiration in them. Grazie mille for sharing your vegan substitutes - they sound delicious! Sending warm greetings to Switzerland! 🇨🇭🇮🇹🌱
Those ingredients do indeed have a similar flavor profile to ratatouille, and they can be used to create delicious Italian dishes as well. Experiment with them in your cooking, and you'll discover a world of tasty possibilities! 🍆🍅🇮🇹😊
Beautiful dish Vincenzo. However if I may just comment one thing, I think the sauce could have been reduced alittle longer. Just looks a tad too thin to me. And thus I am relieved that you didn’t add the pasta water this time as it’s a tad too thin. But would still love to eat it❤
Thank you for your feedback! I appreciate your input, and I'll keep that in mind for future recipes. Enjoy your meal, and I'm glad you're still excited to try it! ❤🇮🇹🍝
Pecorino is made with the rennet harvested from the stomachs of lambs, are there any veggo's here that have found a vegetarian equivalent in australia?
Grilling the veggies before adding them to the sauce is a fantastic idea! It can infuse the sauce with a smoky and charred flavor that adds an extra dimension to the dish. Great way to customize the recipe to your taste. Enjoy your delicious creations! 🍝🔥🇮🇹😋
Just made it - delicious! Though, I went to the small, nearby grocery store, so I had to leave out the egg plant and the celery. I just put more of the others (including a mid-sized carrot) + added celery root in the first batch with carrots & onion. Also, they only had "orange" rigatoni, so I bought Rummo's fusilli instead. Used 1000g of Mutti's passata, it was just about right. Even with that store's prices, it was just 10€ total, not counting the pecorino and olive oil I already had, and I'd say this serves 4 people. Oh yeah, I sliced one fresh jalapeño in there. I don't know if that was a sin against Italian cooking, but I'm happy and not apologizing!
Vincenzo can you explain how do you rasp your cheese? i want it to have like the tiny balls, it doesn't work with a microplane it always gives grated cheese. i have the gluten free rigatoni from rummo, so i can make this. and i will make it. thx grazie mille grande tutti.
Certainly! To achieve those tiny cheese balls, you can use a tool called a "cheese grater" with very small holes. It's often used for hard cheeses like Pecorino Romano or Parmesan. Simply hold the cheese block against the grater and rub it back and forth to create those small, round shavings. This will give you the desired texture for your pasta dish. Enjoy making and savoring it! 🧀🍝🇮🇹😊
I'm delighted to hear that even as a carnivore, you would enjoy this vegetarian dish! It's a testament to the delicious flavors that Italian cuisine can offer. Buon appetito! 🍝🇮🇹😊
I keep forgetting to comment on this video but I've made this for my wife because she's a vegetarian and she loves this. I do too and I'm a meatatarian lol. This is delicious and this would also be great for kids that don't like vegetables.
Hey Vincenco. I’m a Melbourne boy living a long way from home. Here fresh produce is abundant but anything “italian” is hard to find and when I do find the price is crazy. So olive oil is always expensive…. extra virgin….,,I need to donate a kidney😂. I’ve been using coconut oil? Your thoughts? Thank heaps. Luv ur channel
Ciao! I understand that finding Italian ingredients can be challenging and expensive in some places. While coconut oil can be a suitable substitute in many recipes, it does have a distinct flavor that might not work well in all Italian dishes. You can use it when appropriate, but for recipes where the flavor of extra virgin olive oil is essential, consider looking for more affordable options or using it sparingly to make the most of your resources. Grazie for the support, and I'm glad you love the channel! 😊🇮🇹👨🍳
Since I started cooking your recipes with high quality authentic ingredients I prefer eating pasta at home compared to restaurants. You completely fucked up my standards. :D Good thing I live in europe so I can get almost everything in high quality. I got to a point that I am ordering 4 kg pecorino sardo cheeses straight from Sardinia.
I used to make this a lot on vacation due to simplicity, but never thought of tomatoes which would take this pasta to the next level. Did you just peel and blend raw tomatoes 5:42 ? Or was it passata that you cooked before?
Thank you for your concern! Technical issues can happen, but everything is alright. I appreciate your support and hope to bring you more exciting content in the future. 😊🎥
You are basically a nicer version of Uncle Roger. Uncle Roger would be like, "You want vegetarian, then don't eat this food and you don't deserve to be happy." But you are like actually giving alternatives that still respect the culture.
Thank you for your kind words! I believe that food should be enjoyed by everyone, and there are often ways to adapt traditional recipes to accommodate different preferences and dietary choices while still respecting the culture and flavors. I'm here to provide helpful and inclusive alternatives for all to enjoy. 😊🍽️🌍
Oh, this is cool for me if i could take vacation to other nation because halal food kinda rare depend on where nation you went to. Thanks chef. Next time is vegetarian carbonara please.
I'm glad you found the recipe useful! I'll definitely consider creating a vegetarian carbonara recipe for you. Traveling can be a wonderful way to explore new cuisines, and having delicious options like this can make it even more enjoyable. 🍝✈️😊
That's wonderful to hear! Italian cuisine is known for its cheese, and it's great to know that there are vegan alternatives like Vio Life's parmesan-style cheese for those who follow a vegan diet. It allows people to enjoy the flavors of Italian dishes while staying true to their dietary preferences. Grazie for sharing this information! 🌱🧀🇮🇹😊
Pumpkin can add a rich, sweet, and earthy flavor to your vegetarian pasta sauce. While it might not be the most traditional choice, cooking is all about creativity and personal taste.
