How to make wild venison sausages 

I have taken a break from working on the land and processed a bag of venison I had in the freezer.
I use Tre spade mincer and stuffer. My hunting rifle is a Thompson Center Pro Encore. (in thumbnail photo).
Seasonings are from Dunninghams NZ.
