Yum! Nothing like a nice piece of fresh fish! I'm going to have to go to the fish monger later in the week! Actually when you cook salmon you should always put it skin side down first and cook it most of the way before flipping it over to the flesh side.

I recently watched a Marco Pierre White video where he's making salmon, and he says: "When you go to Spain, and you watch them cook fish, they shallow fry it - but watch how well they cook fish! Very few people cook fish as well as the Spanish." It's hard not to agree. Having been to Spain, you guys truly are among the fish lords with your pan-grilling techniques. I never knew of this technique where you don't use oil, but I'm trying it tonight!
Albert is basically vegetarian, though he does eat fish and eggs. Meat, so popular in Spain and South America, just isn't his thing, but if you search RU-vid for 'Spanish beef', you'll see loads of options.

Cod will always be my favorite, salmon's good too, never tried grilled tuna. But all three look lovely especially with that garlic and parsley sauce. I'm just thinking what I could serve with each piece, probably a light salad with tomato and garlic only crusty bread.

Albert great vid and some very good advice on cooking fish. WOW that vid must have cost a lot! i would estimate that here in the UK all that fish would have cost about £40.00 from a supermarket. Although Yummm. Still waiting on a sardine dish! LOL
Coincidentally, I found Spain On A Fork, when doing a search for sardine recipes. There are several recipes for sardines on this channel. I believe that just last week, Spain On A Fork gave us another sardine recipe.
It is a personal preference like steak doneness. I like mine medium well so i think i would cook that fish a little longer. But the chef cooked it EXACTLY like they do in a restaurant.
Very simple and healthy! Do you think this will work with small whole fish that are a little less than one foot long, or do you need to use only fillets to cook both sides? I was thinking about cooking fresh caught trout like this.
Does anyone else have to turn OFF CC on his videos? His are the only ones that I have to keep turning it off, as it appears to be automatic. I've checked my settings, and don't see anything that would make sense as to why it's happening. I love his recipes! Thanks!!
That salmon is for sure undercooked in the center. Salmon needs higher heat and more oil in the pan. Once you see the color change coming up halfway through, then flip it. Notice the center of the side of his salmon is still red, not pink.
I happen to agree with you, but most people like their salmon and tuna still red in the middle. It’s edible, think Sushi, and the temperature gets high enough to kill the bacteria that might be there from the handling.
I like your channel but your low slow voice tone during the demonstrations are so annoying. The end of this video your voice is normal which is so much more enjoyable.
