You probably learnt this by now, but you can also make the entire dough stretched and smooth (which I find easier) and then push some of the dough through a circle you make with your fingers. Then when the proper amount of dough gets through, you cut it with those same fingers, and it will stretch the entire surface up and make extremely beautiful round rolls. Saw a pizza guy doing this for prep, and it works.
Shastynn Victoria to do that it requires a lot of practice. They do that all day that’s why they are able to do it. Us in the kitchen it’s different. Also it looks like they are making pizza dough with is very different texture than the dough she is using.
