How to Smoke Brisket in an Offset Smoker Step by Step

I tried a new method on this brisket and it was honestly the best brisket I've ever smoked and one of, if not the best I've EVER tasted!
Great bark, super juicy, great smoke ring, amazing flavour, perfectly tender and just all round fantastic!
In this video, i'm going to show you how to smoke brisket in an offset smoker step by step. If you are a beginner, or have just picked up an offset smoker or are simply just looking for some brisket tips, then this is for you!
You'll get to see the whole process from start to finish.
I'll show you how to set up an offset smoker, i'll teach you some fire management, how to trim a brisket, smoke it, slice it and everything else in between.
Always make sure you favour probe tenderness when you think your brisket is ready. Use the 205F/96c internal mark as one point of reference but always make sure you are happy with probe tenderness and don't be afraid to take your brisket a little further if you think it needs it.

I`ve gotta say, this video is the one on the top of the list for me. You did an AMAZING job with the video AND the brisket. You kept it very simple and easy. I`ve been doin smokin bbq`s for 60+ yrs, and i`ve never seen the "aluminum boat" method before. I`ll give it a try! Looks like it worked really well for you! And a huge thank you for posting an incredible video and brisket cook. My only problem is, having to wipe up all the drool from my keyboard now, lol.

Awesome video, on the rub salt and pepper in a 1:1 ratio. This helps dry brine the meat so that it locks in its natural flavors, while giving it a smokey edge with the pepper. A lot of people in Texas use this simple method

I recently got my first smoker, an Oklahoma Joe's reverse flow. This video easily helped me to improve my fire. There's definitely more consistency between the chamber temps and grill temps

luv the Oky Joe ! Inexpensive, well built and just a smoking beast! Mine is a half and half. I like getting smoke on the steak and searing it on the gas. The gas grill half really puts out some btu's! Nice buy for under 500$ Nice video! Just the basics and not overly complicated. Good job mate!

@Low n Slow Basics I sm doing a brisket right this minute and it's a new smoker that's much bigger than I'm used too. I was having some fire issues and I'm not used to the temps on it yet either. I watched a few of your videos on fire management too and so far so good but i used use pecan wood and all I could get was mesquite and it seems so hard and even after warming them. They are still having trouble getting started. Is that a normal with that kind of wood. I even cut them smaller still issues

Literally a drooling mess right now. Great video by the way. I've just picked up my first side smoker bbq as I wanted to have a go at doing a nice piece of brisket. I'm not going to big with it though for the first one. Only about 3kg. Can you suggest how long it would take roughly etc?

Out of curiosity, how did you collect the fat? Did you just get a lot thinner pan, so it could fit on the plates/between the grates? I bought the same smoker, and am preparing myself to do a brisket this spring.

Thanks Aaron. I just subscribed. Question please: when you get to the end and the point is tender but the flat is still a little stiff, do you keep cooking until the flat is tender? Sometimes I do but I end up with a pot-roasty point. How do get them both tender but not overdone? Thx! Scott

Following this tutorial pretty much to the letter. Just at the 90°c end of the boat 2nd stage. I can feel the meat tenderizing as it gets to the cooked temp. Omg can't wait to taste. I'm using old kwila decking as fuel... 😂❤

Thanks for the helpful.videos. A couple of questions for you. I notice you don’t have a deflector plate or tuning plates in your smoker, do you find this better than with? I tend to get a lot of ash coming into the cooking chamber without them. I use iron bark also. Do you find much ash getting into the chamber/on the food?

Great questions! I do have a deflector to make it reverse flow, I could use one section of it and keep it standard flow, but I have no issues with it, if I had the offset full I’d use it to stop the higher heat on firebox side. No real issues with ash on meat.

Thanks so much for using real wood real pits and not cooking everything in a pellet or electric cooker. I know everyone cant tend a fire like they should but lets be honest this is a good looking brisket. Probably a GREAT tasting brisket. You will never get this from a pellet cooker

Mate loving the videos I'm new to the low and slow game have only done 2 briskets so far only small ones about 2kg. Using a cheap kettle till I get it all sorted then upgrade. Both come out not bad good bark and flavourful

How would you go about using pellets in this setup ?

So my offset is different to control temp obviously due to wood split variance, moisture of wood, wind etc. My question is how it effects the internal temp of the meat? If it’s dancing between 200-300 degrees, is it possible to overcook due to this? As the brisket sat at 170 for the longest time until it hit 200

this will be super useful, i gotta ask tho, 1 what type of knife is that, 2 is there any smoker thats internationally available or at least can be shipped to the uk and 3 is there any cheaper meat probes that you would recommend? all the ones i find are overly expensive with poor reviews
