How to Smoke Ribs (Beef, Pork and Lamb)

Beef, pork or lamb ribs? What's your favourite?
In this video i'm going to show you how to smoke ribs, beef pork ribs and lamb to be exact! I'm also going to try and get them finished at around the same time too!
I'll be covering off the below:
- BBQ set up
- Beef rib preparation
- Pork rib preparation
- Lamb rib preparation
- Cooking times and temperatures
And much more!
Here's a short break down for each rib below:
Beef ribs - I don't really trim beef ribs anymore, just any excess fat I trim down to 2-3mm thick. Then i'll simply season and smoke them at around 275F/135c until they are probing tender around the 205F/96c internal mark which usually takes around 7-10 hours.
Then i'll let them rest before slicing and serving!
Pork ribs - I'll trim excess fat, remove the bottom membrane, season and smoke until i'm happy with the colour which usually takes around 2 hours.
Then i'll wrap with butter and BBQ sauce until they are probing tender which usually takes another hour or so. Then i'll finish them with one final sauce to finish before slicing and serving!
Lamb ribs - I'll remove the fat cap and trim any excess fat, then i'll remove the flap meat on the underside and score the membrane. Then i'll season and smoke until i'm happy with the colour, then wrap with some beef tallow until they are probing tender.
There's lots of different ways to smoke beef, pork and lamb ribs. This is just how I like to smoke them!

It is not possible for me to choose a favourite. All ribs done right are amazing. Lamb robs are not as common but can taste amazing. I love leaving the fatty on and crisping it up at the end of the cook. It can be as good as pork crackling.

Lamb ribs are so underrated, love them but I think the fat on them can be a bit rich sometimes so I can't eat as many as the pork ribs 😂 pork ribs are definitely a favourite in my house

Awesome video cheers. How long can you let pork ribs sit before glazing? If I get them to temp a couple hours before serving could I let them rest in an esky and then finish later?

A question on Pork ribs. Will there be any difference in the taste etc if the ribs were frozen and then thawed? I bought some fresh but couldn’t cook them within the useby so put them in the freezer.

The combo is offset right? Similar times and temps yeah but different setup in offset.
