I used to watch “Mexico one plate at a time” on PBS when I was in my early twenties and had moved out into my first apartment. Couldn’t afford cable (no loss there). Didn’t know how to cook either, but his deep knowledge and immeasurable enthusiasm was alluring and made learning some of these complex recipes seem much less daunting. ❤
Great talk! I'm so glad you are shedding light on Mexican Chiles because honestly I use them very often but don't stray too far from cascabel, guajillo and New Mexico (for heat) dried Chiles. I love learning what others exist and what you think they're best suited for
I grew up on authentic Mexican food in California. I moved to Long Island 39 years ago. There is not one good Mexican restaurant on Long Island. I think many New Yorkers don't even know what authentic Mexican food tastes like. Very disappointing. I watch Rick Bayless and my mouth waters. I can not even begin to imagine what delicious aromas are in his kitchen.
i competed in a chilli cook off. i used lots of different dried chillis. i roasted then ground them for my own chilli powder. nobody could figure it out. i won best over all and most unusual. it was rabbit!

Hi Rick, I bought your Enchilada sauce in the ready to use bag at the store. I will have your enchilada sauce And dried chiles on hand at home because I like them all too. If I am in a hurry your enchilada sauce is my go to sauce. If I have time at home and I love to cook old school then I will use the dried peppers. I'm 66 and have found that using a little of this and a little of that creates "that" flavour I can't find anywhere else. Thank you, Chef, for sharing your love of cooking too.
